Kool-Aid® Pie

This is slightly different from my childhood favorite, which was made with evaporated milk and frozen. This one is much easier (which earned the 5 stars) and could be so much fun in the various Kool-Aid flavors/colors.

Basil-Garlic Grilled Pork Chops

I marinated overnight and really enjoyed this, although it's difficult to keep the pork from getting a little tough. I wasn't sure about basil with pork, but was pleasantly surprised.

Warm Italiano Spread

Very, very good. We used a little more pesto and baked it in the oven. The only drawback is once the pesto on top is eaten, you are left with a good bit of cream cheese. I think I will slice it, then top it so it goes down into the block.

Cedar Planked Salmon

4.5 We aren't huge salmon fans, but are trying to eat more fish. This was a fun technique and it had excellent flavor that wasn't too fishy. I soaked the planks overnight in a 5 gallon bucket and defrosted the fish in the marinade overnight. My filets were thinner than pictured and probably could have spent less time of the grill. I will get thicker filets or leave them less time. We think some type of sauce/glaze would be really good. (2nd try and I changed my rating to 5. I used a thicker filet. It was incredible, although a light glaze will enhance it next time.)

Mulled Cranberry Cider

This is a great cold weather treat. I used blueberry honey because I had it on hand. After a few hours in the crockpot, the craisins were great. I will use a cheesecloth-type bag to hold the whole cloves when I make it again.

Grilled Pork Loin Chops

4.5 Stars: I cut a 2.5 lb pork loin roast into slices and marinated for 2 days. It was very good, but be careful with the cinnamon. We all agreed a touch more cinnamon would have ruined it.

Garlic-Herb Roast Pork

The rub was very good. I used a 4.5 lb loin and it was ready within 1.5 hours. The second time I used a 2 lb (enough for 3-4 people) and it was delicious again. It was ready in an hour on 350 the whole time.

German Leek and Potato Soup

4.5 Stars, only because I do not like all of it pureed. I will leave more chunks next time. I used 2 leeks instead of 1 cup and russet potatoes. I used 2 cans chicken broth and finished with water to 6 cups. I did not have a ham bone and used 2 TBS ham base and a sprinkling of dry thyme. I also used light cream to reduce calories. My daughter who thought she hates leeks ate it, then I told her it was leeks. She was surprised.

Hash Brown Casserole for the Slow Cooker

3.5 Stars: Following reviews, I used French onion dip which worked great. I used the cream of mushroom with roasted garlic and that seemed to mess it up. I will make it again because it is easy and frees up the oven, but with regular cream of mushroom. I used cubed hash browns because it did not specify which kind. It was ready in 6 hours on low.

Annie's Turkey Salad

I halved the recipe and can't believe I have never made turkey salad. It's wonderful. I used sweet pickle relish. I did not have the dijon/mayo mix, so I used a bit of dijon, a bit of yellow mustard and the mayo. As the recipe says, letting it sit in the fridge does make it better.

Grilled Chicken with Herbs

We were not impressed with this recipe; however, I did not completely ding it because I followed reviews and added the balsamic later in the marinating. I also did not have all of the parsley. I can say it drastically needs salt and pepper.

Chicken Cotija

4.5 Stars: This was different and very good. I served with the broken pasta found in the Hispanic section. My husband suggested a rice/pasta mix for a little more texture. All in all, a surprisingly good (and easy) dish.

5 Minute Microwave Cornbread

We found this edible and quick, but as a Southerner, it just wasn't good ole' cornbread. It is fine if served topped with chili, soup, etc. I used an 8x8 square pan and 3.5 minutes did the job. A smaller pan may yield better results.

Sicilian Homemade Ricotta Cheese

I do not use the cream and do not let it sit for an hour before straining. I will try adding the cream next time and this recipe uses more salt than mine and I think that's a great idea.
