Polenta with Rosemary and Parmesan

This is a good side. I had cornmeal mix, so I left out the salt and it was perfect. I always forget I have to bake polenta, but it definitely needed it. I served it with the Braised Pork Ragu and enjoyed it.

Braised Pork Ragu

This was a restaurant-quality entree. I used pork tenderloin and did not have carrots. I served it over the Rosemary Parmesan Polenta on this site and it was truly fantastic. I will also try serving it with pasta, mashed potatoes or rice. Fantastic!

Yummy Honey Chicken Kabobs

4.5 Stars: I marinated 2 lbs. chicken tenders for 2 days. It was a good marinade. I made another 1/2 batch of marinade/sauce for basting. One day I will master grilling tenders without drying them out, although I did do better this time. I served this with yellow rice, but think a fried rice or Asian-type side would be better.

Grilled Lemon Herb Pork Chops

I used one pork tenderloin (one, not a package of two) and kept it whole. It marinated for 1.5 days and was fantastic. It was such a wonderful change from typical pork tenderloin recipes. I served it with roasted quartered, baby red potatoes that I roasted along with the pork. Truly delicious.

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

4.5 Stars: I prepped earlier in the day, then baked for dinner. The potatoes had browned even though the dish was covered, so in the future I would not add them until right before baking. I think I baked it too long, too, because the chicken was a bit dry. I used no oil during frying. I browned the sliced brats first, then added a little water to the browned bits in the pan for the chicken and potatoes. This gave the chicken a delicious flavor. Chicken broth or wine would have worked well for this as well. It's a great Octoberfest recipe. My husband thinks saurkraut would have been a great side.

Honey-Spice Acorn Squash

4.5 Stars, but I do not understand why the recipe calls for making twice as much squash as needed. I did like the honey mixture just as well as the regular brown sugar mix I had been using and it's probably healthier. I used an entire recipe of filling for 2 squash (4 halves).

German Leek and Potato Soup

4.5 Stars, only because I do not like all of it pureed. I will leave more chunks next time. I used 2 leeks instead of 1 cup and russet potatoes. I used 2 cans chicken broth and finished with water to 6 cups. I did not have a ham bone and used 2 TBS ham base and a sprinkling of dry thyme. I also used light cream to reduce calories. My daughter who thought she hates leeks ate it, then I told her it was leeks. She was surprised.

Smoky Grilled Pork Chops

I used boneless loin chops that were probably 2" thick. I marinated overnight and the flavor was great. The only complaint was the some had some "gritty" pieces from the rub. I did not personally have this problem. Great flavor.

Pepperoni Crisps

Stuffed Shells III

Fantastic! The shells are hard to find here, but we found them at WalMart. I halved the cheese mixture, which stuffed 12 shells. I even let them sit in the fridge stuffed (but not with sauce) a day before cooking.

Tenderloin with Cherry Sauce

4.5 Stars: A great Fall dish. I had to use dried cranberries because I had those on hand. I also used a "cherry butter" which is much like preserves. My husband and I enjoyed this and I was surprised the pork was so tender. I served with mashed potatoes.

Easy Flat Iron Steak in Wine Sauce

I give this a 4, but my family gives it a 2. I used a 1.5 lb. flat iron steak and left out the mushrooms. I used a good pinot noir and the sauce was good. My only issue was the seasoning practically blackened and became somewhat gritty.

Totally Tangy Baked French Fries

These were very greasy and never became crispy, even after cooking longer. I eventually had to fry them, which is what I was trying to avoid. I gave it 2 stars because I think the spice mix is tasty, but do recommend reducing the oil.

Creamy Cheesy Grits

I thought these were fantastic, but some of the family did not care for the strong parmesan flavor. I will probably substitute for the parmesan next time, but this is very easy and tasty.
