Ricotta Gnocchi

I had fresh ricotta to use and decided to make this since I love gnocchi. Unfortunately, I can't seem to make the "light, cloud-like" gnocchi every recipe site talks about, but I think that's my error. I used jarred sauce.

Oven Baked Jambalaya

4.5 Stars: I was so concerned about the reviews saying the rice does not cook that I made it early in the day. The rice cooked perfectly, so by the time I served it that night, it was a little mushy. We have a shellfish allergy, so I increased other meats and left out shrimp. She did not like it anyway, so I will use shrimp next time. We all agreed this had a good flavor and I thought it was pretty easy.

Creole Green Beans

I had to leave out the bacon, onion and bell pepper, but we really enjoyed the cajun seasoning. I would definitely use the bacon and onion next time.

Quick Quiche

This was easy and good. I cheated and used bacon bits (the real bacon pieces) that were in the cabinet. I did have to cook it an additonal 15 minutes for it to set.

Red Wine Pork

3.5 Stars: I liked this more than anyone else in my house. The meat did not pick up a lot of flavor. IF I make it again, I will marinate it overnight. The carrots did not get done, either. I did not use mushrooms.

Sicilian Homemade Ricotta Cheese

I do not use the cream and do not let it sit for an hour before straining. I will try adding the cream next time and this recipe uses more salt than mine and I think that's a great idea.

Outrageous Warm Chicken Nacho Dip

Outrageous is right! This was the hit of our Superbowl party. I put more chicken and could have used the entire can of black beans. If I have a larger crowd than 6, I will definitely double the recipe.

Jalapeno Popper Spread

This was okay. I put the entire 4 oz. can of diced jalapenos, but I think I cooked it at too high a temp in the oven so it separated. It was tasty, though and worth a repeat, but I will half the recipe.

Salsa Chicken

4.5 Stars: I put an entire packet on 3 breasts, added the salsa and let it sit overnight. It's quick, tasty and would make great chicken taco filling. A fresh avocado on top was the best part.

I received this recipe from a British friend years ago who added mushrooms. I leave those out and I love it. I particularly like it as an Easter or Holiday side.

BBQ Pork for Sandwiches

I used pork country ribs and cooked on low 8-10 hours (in broth). Pulling and putting it in the oven to bake for 30 minutes in the bbq sauce really pulled the "crock pot" flavor out of the meat. This is super easy and a great recipe. 2nd time, I cooked on high 4 hours and proceeded as written. Again, no "crock pot" flavor!

Portuguese Pork with Red Peppers

This was largely flavorless. I used sliced pork loin and followed the directions, it just did not pick up much flavor and needed a good amount of salt and pepper.

Cheddar Spirals

This was simple, easy and delicious. I cooked the pasta al dente and used sharp cheddar. It would be perfect for a time when all the stove burners are full and you need a dish to feed a crowd. Do add salt and pepper. After MANY times of making this, going full fat on the 1/2 and 1/2 is best.

Ooey Gooey Breakfast Rolls

This is our Christmas morning tradition; however, I use 25 oz. frozen rolls instead of cutting up dough. It rises overnight and is ready for the oven first thing in the morning.
