Pepperoncini Beef

This was super easy, especially since my roast was mostly frozen. I just spread minced garlic on top instead of inserting it. We made sandwiches as pictured, and my daughter wanted them served with au jus. I will try them in the future with extra not-cooked pepperoncini, lettuce, mayo, etc.

To Die For Blueberry Muffins

My husband said to stop looking for blueberry muffin recipes, this is it! I filled the muffin cups almost to the very top, used the exact ingredients and they were incredible. I might possibly try brown sugar in the topping next time.

Black Bean and Corn Salad II

I used less oil and more fresh lime juice. I definitely recommend the fresh cilantro. It is very good and I like other reviewers' suggestions of adding pasta and/or chicken for an entree. It makes a lot and I will probably half it next time as my other family members did not want to try it. Add more salt.

Savory Garlic Marinated Steaks

I marinated 1.5 days. I cut the marinade in half and it was more than plenty for two steaks. I hate throwing aways huge amounts of marinade. It was still a little salty, but good. The cook time made ours almost well done. ugh.

Best Spanish Rice

I don't know about the "best", but it is simple and good. There is a fine line between undercooked rice and mushy and I added a bit more chicken broth toward the end.

Lemon Pepper Catfish

This recipe has MUCH too much breading and egg listed. I used 1/4 of it and still had leftover. I kept the lemon pepper at the original amount, but still did not get much flavor from it. My only change was to broil it rather than pan fry, but that should not have changed the outcome. We ate it, but it lacked flavor and I had to throw away a lot of breading.

Caprese on a Stick

I did a "deconstructed" caprese because I have some who do not like tomatoes. Everyone could build their own. I did put a little Italian dressing, salt and pepper to add flavor. The mozzarella balls are pretty plain.

Mini Pineapple Upside-Down Cakes

These are delicious, particular the cake. I double the brown sugar/butter mixture and am glad I did. I also used a pineapple cake mix with water. Cutting the pineapple to size is hit and miss. The unmolding was the worst part. They did taste good, though.

Chili Chicken

I marinated 3 boneless skinless breasts for 2 days, reserving about 1/3 cup for basting. I butterflied and grilled them and they were good, but not as flavorful as I expected. The next time I will butterfly them before marinating.
