Irish Potato Casserole
I made a large batch of these potatoes, and no one really liked them. There was too little potato, way too much butter, and I think they were a bit too salty, too. If I were to make them again, I'd definitely add more potatoes and cut back on both the salt and the butter.

Best Ever Jalapeno Poppers
I wish the recipe had clarified to use fresh jalapenos. I didn't! Didn't taste as good with the pickled ones. I paired this with the Pico de Gallo Chicken Quesadillas so I was working with that as I made the poppers. The breading process worked best for me when I dipped all the jalapenos in the milk at once, drained using a strainer and reserving the milk, and then shook a few at a time in a ziplock baggie. I then breaded half of them and fried them while I breaded the other half. They were really good, and I can't wait to try them again with the fresh jalapenos I bought today. I wonder, too, how they freeze and what the process would be for freezing and reheating them. Thanks for the recipe!

Pico de Gallo Chicken Quesadillas
My husband and children LOVED this recipe! It took some time to make the salsa, but it's the exact recipe I use anyway, so I was used to it. Roma tomatoes are very good for this. I paired this with the Best Ever Jalapeno Poppers. Yum!
