Peanut Butter Cup Cookies II

Bet you can't eat just one of these! I increased the vanilla to 1 tsp. and added 2 Tbsp. of milk, but otherwise kept the recipe the same. I used a mini muffin scoop to measure out the dough and cooked it in mini muffin tins. I pressed one frozen mini P.B. cup down into the top of each one, before cooking, and that left an imprint that was easy to fill with the candy cups once they came out of the oven. The bake time for my oven was closer to 10 mins, and they required quite a bit of cooling in the fridge before they would come out without breaking. Make these- you won't be disappointed!

Sweet Potato Pudding

I am only giving this three stars, because it didn't turn out to have the texture that I was expecting, after reading the title of it. Also, I found I needed a much larger than 2 quart dish. I ended up putting it into 2 casserole dishes and before I filled the second one, I pureed it in the blender, but still did not come up with a 'pudding' consistency. People were, however, impressed with the overall taste.

Campbell's Kitchen Tomato-Basil Chicken

This recipe is fast and simple to prepare, but very tasty. I added sauteed onion, celery and sweet pepper, and also some ground black pepper. Next time, I think I will try increasing the garlic powder to 1/2 tsp. We served this over brown rice and it was very good. A definite keeper!

Orange Drop Cookies IV

I really liked this recipe! I substituted butter for margarine, in the cookie dough and in the icing, and added 1 tsp. vanilla and 1 tsp. orange extract to the cookie dough. I did not put the zest in the icing, only in the cookie, but the end result was a nice, delicate orange flavour, not too overpowering. I only added 2Tbsp of orange juice to the icing, making a sticky Buttercream type frosting. This recipe makes a lot of cookies, but there wasn't quite enough icing for all of them. I will definitely be making these again!

Nutmeg Refrigerator Cookies

I don't like to give unfavourable reviews, but this recipe just didn't have enough flavour for me. I made the 1/2 tsp. of nutmeg a very rounded one, but the cookies still just weren't spicy enough for me. I won't be making these again.

Bacon-Roasted Chicken with Potatoes

Two "yums" up! This recipe is awesome! Used regular bacon, and there was no problem with the potatoes being dry. Also covered with foil, to stop splattering in oven. Thought the seasoning mixture would be too spicy, but it was just right. Highly recommend lining your 9x13 with parchment paper before adding chicken, etc, to make clean-up easier. Many thanks for sharing this recipe!

Chicken Breasts with Herb Basting Sauce

I marinated the chicken breasts in the sauce, omitting the rosemary, marjoram and hot sauce, but it was still good. Boneless skinless breasts only took 20-30 mins. @ 375 F.

Malaysian Barbecue Chicken Wings

We liked this recipe, but found the flavour a bit strong, which was I think due to the sesame oil, even though I put half sesame and half vegetable oil. Would like to try making again, but without any sesame. Just not big sesame fans, sorry!

Simple White Cake

I couldn't decide if I should give this 3 or 4 stars. I made the recipe into cupcakes, for my son's 17th birthday. I filled them with raspberry all-fruit jam, and topped them with lemon icing. My son really liked them, but I agree with other reviewers that the texture was slightly 'gritty', like cornmeal, even though I made sure to beat all ingredients well, until very light and fluffy. I used free range eggs, purchased from a local farm, and the batter was VERY yellowish!

Jelly-Topped Sugar Cookies

I was hesitant about the use of oil in these cookies, and 3/4 of a cup sounded like too much, but they turned out really well. I measured out less than 1/2 a cup of sugarless (fruit juice sweetened) raspberry jam, and didn't even need the amount in the measuring cup. The end result were attractive, light, delicately flavoured cookies, a wonderful, bright addition to my Christmas baking. Thanks for sharing!

Health Nut Blueberry Muffins

This is a very good recipe, and the muffins came out with a great texture. I used half a cup of brown sugar (unpacked), for the white sugar, and 1% milk with lime juice for the buttermilk. Next time, I will follow other reviewers suggestions and add some spice, and also cut down or omit the baking soda. I only got 10 muffins out of this, instead of 12, and they took more than 15 mins. to be fully cooked inside. I had no problem using frozen berries, when mixed in with the dry ingredients. Thanks for a tasty, healthy recipe, will definitely make again and again.

Chicken 'n' Biscuits

I added cr. of chicken soup, as others suggested, and also substituted low sodium vegetable broth for some of the milk. I doubled the biscuit mix and needed a 9x13 pan. I added garlic to the onion and think this would also be good with celery. Also added chopped green onions to the meat mixture, and increased the pepper to half a tsp. Good recipe! Definitely comfort food...

Baked Salmon II

Let me start by saying that I am not a big fan of salmon, but this was tolerable...almost good! After following other reviewer's suggestions, I used 2 Tbsp EVOO, 3/4 tsp. basil, 1/2 tsp. salt, scant 1/2 tsp. pepper, 3 Tbsp. lemon juice, 1 tsp. parsley, 2 cloves garlic, and about 1/4 tsp. of dill. The only thing I would change for next time is to decrease the lemon juice to 2 Tbsp, as I found it a bit too 'lemony'. Removing the skin before cooking, as someone suggested, really did seem to reduce the 'fishy' taste! Thanks for that tip!

Baked Chicken Wings

I found these wings to be a little too greasy. I would recommend either removing the skin, first, or maybe just shaking them in a bag with dry spices, and not adding the oil. I think they could be improved with the addition of onion powder and some cayenne, but otherwise they were quite good.

Chicken Breasts Pierre

This was really good! I made this with beef broth, instead of water, because I had a carton already open in the fridge. I also used a bit of cayenne, instead of the hot sauce, and added sliced onion and chopped red pepper. I cut the chicken breasts into small cubes, before cooking, and served it over basmati rice. Next time I would like to try skipping the flour part, and just cook the cut up chicken, and then add to the sauce. Thanks for sharing!

Banana Muffins I

I am surprised by the number of people who loved this recipe, and have to agree with those who said they found it to have too much baking powder. I did not like the 'spongy' texture. It only made 9 muffins, and they did not have the high rounded tops that my usual muffins have. Sorry, but I will not be making this one again.

Marinated Baked Pork Chops

I found the suggested cooking time much too long. Next time, will follow others suggestions! I also sprinkled black pepper and garlic powder on chops before adding sauce. My BF said these were perfect, but much too dry and chewy for my son and I, after only 30 minutes total.

Beef and Noodle Casserole

I cooked the noodles al dente, mixed in the parmesan, omitted the sherry, and added mixed frozen vegetables. My BF thought I'd made Hamburger Helper, which I never buy, and he loves! If you're looking for a gourmet recipe, this isn't it, but if you're looking for something quick and tasty, this is it.

Italian Cheese Bread

I couldn't decide whether to give this recipe 4 or 5 stars, but it was very good! I added 1 Tablespoon of oil, and substituted a half teaspoon of the salt for garlic salt. We only had cheddar and mozza, so used both of those for the cheese. My loaf did not really 'cave' or 'collapse', as others said, but the top was not perfect. The taste, however, was good, and the rest of the loaf sliced well. It was still quite 'peppery', even though I reduced the pepper by half.
