Enchiladas

I think authentic enchiladas are made with corn tortillas and so much better. The rest of the recipe is a good basic recipe for enchiladas

Downeast Maine Pumpkin Bread

This is a great moist pumpkin bread recipe. I did use applesauce instead of oil. I suggest that if you do use applesauce make your own. It is super easy and so delicious. I never add sugar or spice just the wonderful flavor of the apples. Use any kind of apple, it's more of the sweetness of the apples you prefer. I like to use the gala. The recipe calls for plenty of sugar, no since in adding more. Of coarse I always add pecans or walnuts and raisins. For an extra treat, I sometimes soak my raisins in vanilla rum before adding them.

The Best Chicken Fried Steak

I'm from Oklahoma and Chicken Fried Steak has always been a staple where we are from. The only thing different in this than the way we've always done it is the addition of the baking soda and powder. This makes an amazing crust. I now have a whole new love for chicken fry!

Jalapeno Cheese Bread

This is a very good bread recipe. I put the dough of one of my loves in a bundt pan by making several balls of dough and placing them in the pan. It made a good pull apart bread for a cook out

Banana Cake VI

I just had a piece of this lucious cake. I added walnuts to the cake then sprinkled some on top of the icing. The cake could not be any better. I will make it many, many times.

Beth's Spicy Oatmeal Raisin Cookies

I can see there is actually nothing else to say about how superb these cookies are. I do sometimes use cranberries instead of raisins. Depends on my mood. One is as good as the other. I also like my cookies with walnuts. I noticed when I do put the nuts in them they don't spread out as much. So I press them down gently and they will made a perfect cookie. Thanks Beth! These are my favorite cookies.

Scalloped Potatoes and Onions

The only way I have ever made scalloped potatoes is with milk. I thought I would try this recipe since I'm not able to tollerate a lot of milk. The bases for this dish is a lot like my baked potato soup. I really liked this. I will be made here many more times.

Cook's Ham Steak with Classic Cherry Glaze

I do a lot of recipe testing when the husband is out of town. I didn't want to fire up the grill for just myself so i made it in a large skillet. It was still very good. So when he gets home this will be one of my new delicious recipes!

Tina's Peach Cobbler

I was looking for a peach cobbler recipe with more of a pie crust topping. This one was it. This cobbler is SO good. The only thing I did different was to add a 1/2 teaspoon of cinnamon. Delicious

Death by Chocolate and Caramel

These are such good brownies. I seldom have any kind of mix in the house so I used the recipe One Bowl Brownies by Jody Shannon. Her recipe calls for a cup of walnuts. Instead I added a cup of lightly chopped pecans, then a half of cup over the caramel before pouring the top batter on. I thought this would make a good turtle brownie. I also melted the caramels like naples34102 suggested. They are a delicious pan of chocolate sin!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Hmm, these were soo good! I couldn't find adobo sauce at my neighbor grocery store. So I had to make my own. I think it really made the tacos special. I haven't seen another recipe for thise so I will add mine to the recipes. Thanks!

J.P.'s Big Daddy Biscuits

You know what is the best thing about this recipe, besides it making great biscuits? Calculate this recipe to 100 or ever how many you want and you have your basic biscuit mix already made up. Then all you have to do is mix in the shortening (or butter) and milk and pop them in the over. Here's a little hint. I could never make good biscuits but my daughter could. She said since I was used to making yeast bread that I kneaded the dough too much. Biscuits, you have to be gentle with them, with love.

Carrot Cake III

This is the most awesome carrot cake there is. I took this to my husbands work for his birthday. Everyone said it was the best they ever had. It needs nothing added or taken away. If I could I'd give it 10 stars. MomTeresa

Lavender Lemon Bars

These were very good. I have an essential oil company. If you don't like the texture of the lavender buds, you can add a couple of drops of high quality lavender essential oil to the recipe.

Juicy Roasted Chicken

I have tried roasting chicken so many ways and something was always not quite right. I made this recipe last night. The very best roasted chicken I've ever made! I did use butter not margarine. The white meat was so moist and it had a wonderful buttery flavor.

Chicken Cordon Bleu Casserole

This is really good. I read the reviews before I made this recipe. So I used the two cans of cream of chicken and instead of using milk I used 3/4 can of heavy cream and 2 Tbs. of sour cream. It made the sauce perfect. This one is a keeper in my recipe collection.
