Cabbage Rolls II

This recipe is really just okay, but could be tweaked to make it better. The sauce recipe needs to be quadrupled, because even a double batch leaves the rolls pretty dry. I would also add a little tomato sauce to the ground beef mixture, and a little garlic and maybe a little mustard powder. Also, you should know that the easiest way to prepare your cabbage is to core the head, and steam the entire thing. If you try to peel the unsteamed leaves, you are going to tear them.

Tangy Slow Cooker Pork Roast

We really enjoyed this, and how convenient it is! I scrubbed some small red potatoes and put them in the pot whole with the pork, steamed some asparagus to go with it, and voila, an easy and healthy dinner. I made two very minor changes to the basic recipe. I used raw sugar instead of white, and substituted some chili infused vinegar for the red wine vinegar. This is one of those really good basic recipes that you can make so many little changes to and use over and over again. I'm going to try using hoisin, then teriyaki, in place of the ketchup to see how they change the taste.

Basic Ham and Bean Soup

Taking note of some of the comments on this soup, I soaked my beans overnight first, and did not add salt. I do think it was plenty salty, and would have been too salty with added salt. This is one of the best bean soups I have ever had, and was very easy to make. I am not the best at soups, so I was thrilled with how simple this was, and how well it turned out.

Honey Roasted Red Potatoes

These were absolutely delicious! Because of long experience with roasted potatoes, I allowed an hour to roast, and covered with foil for the first 40 minutes. This is definately a keeper!

Baked Lemon Chicken with Mushroom Sauce

This was a big hit at my house! I loved the lemony taste of the chicken, and the mushroom sauce was great. I used two cups of chicken broth in mine. I did make the entire batch of sauce for just two chicken breasts. I'm like everyone else. You just can't have two much of this mushroom sauce, and I would double it if I was making more than two chicken breasts. I'm probably going to this sauce for other things, as well.

Mustard Vinaigrette

Not only was this an excellent salad dressing, we marinated pork loin chops all day in this dressing before putting them on the grill, and they were fabulous!

Curried Honey Mustard Chicken

I have made this twice now, and my husband and I just flipped over it. I was a little nervous of the large amount of curry powder, but it turned out to be a perfect balance of honey, mustard and curry. I actually made a double batch of the sauce the second time and baked all of it with the chicken. After the chicken was done, I plated it up on a bed of saffron rice with the extra sauce poured over all. YUM!! This is definitely a new staple recipe in my household that will be made again and again.

Spicy Oven Fried Chicken

This recipe was a winner at out house! I refrigerated the chicken after breading as another reviewer suggested. If you still are having trouble making your breading stick, you may not be getting your frying pan hot enough before you put your chicken breasts in. I turned my chicken breasts over halfway through the baking time, so both sides would be crispy. The chicken came out very juicy and tender, and the crust was delicious. I'm going to kick up the hot sauce and cayenne next time I make this.

Old Fashioned Stuffing

I loved this recipe, and so did my family. I should have made a double batch, because they scraped the pan. The only thing I did differently was to baste this dressing a couple of times with a turkey baster full of juice from the turkey I had roasted earlier in the day.

Chicken Creole

This was a pretty good recipe, and very simple. I served it over rice to "catch" the sauce, which made a very simple meal with the addition of a vegetable. I only used one can of tomatoes, and diced three fresh roma tomatoes into the pan instead. The fresh tomato chucks made this look fabulous. I will probably up the amount of cayenne I use next time.

Baked Cream Corn

Green Bean and Mushroom Medley

This recipe has fabulous flavor! And so easy to make. My husband just loved this one. I will make this over and over. I used garlic instead of garlic salt, and will cut down on the plain salt next time, however.

Italian Summer Squash Polenta Bake

Fantastic! To make a one dish meal, I cut baked chicken into strips and laid it on top before adding the cheese and baking. This is also good with the addition of black olives and artichoke hearts.

Cheddar and Macaroni Salad

I fixed this recipe for my 4th of July picnic, and everyone just loved it. I did use shredded cheddar instead of cubed cheddar, however. This recipe is definately a keeper!

Fresh Corn Pudding

I really though this recipe was just okay. It wants to stick on the bottom of the dish, so I would try using non-stick spray. I would also use 3 cups of corn next time instead of two.

Chicken Delight

I thought this was pretty good, but I will cut back on the worchestershire next time, as it was just a little too strong for me. Also, I will cut back on the cooking time, as it seemed a little dry to me. I think with a couple of adjustments, this will be a really good dish.

Chicken Jerusalem I

We absolutely loved this dish! I added garlic to zing it up a little, and can't wait to experiment with other seasonings with this sauce. I am not sure why some reviewers had trouble with a strong wine taste. I thought it was just perfect. My only thought on the problem is that it may have been the wine they used. You should never use "cooking wine" or el cheapo wine in a sauce. If it isn't good enough to drink at the table, it isn't good enough for the sauce!
