Sugar Cookies

Maybe it was the shortening that I didn't like?! I've tried them a couple of times and just don't enjoy them too much. My neighbours do though!

Rich and Simple French Onion Soup

Wow do we ever love this. I cook it every fortnight for my family. The boys especially love the bread with baked cheese on top. We never have swiss or provolone, so we use mozza. Parmesan is a must though!

I used alternative flour (rice w/guar gum and tapioca mix), xylitol instead of sugar and almond milk instead of dairy. They turned out great -except that I can really taste the baking powder...

Russian Cabbage Borscht

I love this soup. So does the rest of my family -young and old alike. I have requests to make it often. I pretty much keep to the recipe, but use organic ingredients and low sodium chicken broth. If I only have dried dill, I add a good teaspoon of it.

Baked Kale Chips

I love these baked with olive oil and low sodium soy sauce. I have a convection oven, so I set mine to 325. 9 minutes in my oven is perfect.

Sweet Potato Casserole II

Amazing. I baked fresh sweet potatoes and used those. I halved the amount of sugar and used panela (whole cane sugar) instead. It gave it a warmer taste. I made this for a party I had this Christmas and there was none left over!

Juicy Roasted Chicken

What on earth is it about this simple combination that can possibly turn out SO delicious? I suppose it's the celery that keeps it so moist. I used real butter in the recipe and followed everything else exactly. My chicken was only 3/4 thawed, so it took 1hr and 45min to cook. I was concered about it drying out from cooking so long so I basted it every 10 minutes after the 1 hour mark. My goodness was it ever moist and juicy. One of the best chickens I've ever eaten. It reminded me of turkey dinner.

Baked Fennel with Parmesan

I just finished eating and felt compelled to make a review. I loved it! I didn't taste the 'licorice' but my husband said he could...he hates fennel and still loved it. I used sour cream instead of creme fraiche. I'd change one thing: mixed in some parmesan with the cream sauce not just a sprinkling on top. I sprinkled on a little salt and pepper after it was done. So good!

Italian-Style Swiss Chard

I steamed my swiss chard because it retains nutrients this way more so than boiling. I then added it to the skillet with garlic (I used 6 cloves because we're garlic crazy), some red pepper flakes and some sun dried tomatoes (suggestion from another user.) We loved it. We had it with some roast beef and a small portion of rice pasta. Everything was sprinkled with fresh parsley and parmesan. Oh so good.

Apple Pie by Grandma Ople

Mine just came out of the oven and it's sooo good. I took people's advice and added 1 tsp cinnamon, a dah of nutmeg, 1 tbsp of vanilla (minus equal parts water) and then coated the bottom pie shell with egg to prevent it from getting soggy. My pie shell still turned out soggy on the bottom, but perhaps that was because I used spelt flour and a shortening-free recipe? It really is tasty. I mixed 3/4 of the sauce into the apples before putting on the lattice. Then used the rest to coat the top of the pie. I used a 9.5" glass baking dish and 8 apples was perfect. My pie still bubbled over, though. And it's REALLY juicy...maybe I should have let it cool more before cutting it. Not the best pie I've ever made, but up there!

Simple White Cake

These just came out of my oven - I'm surprised how much they smell and taste like sugar cookies! I followed the recipe exactly except that I didn't have milk, so I added 1/2 cup liquid whipping cream and 1/4 cup water. These are soft, fluffy, moist and ooooooh so good. I haven't made the icing yet...and I'm not sure I will. The flavour of these is amazing. Be sure to whip the butter and sugar for a good long time to attain the fluffiness of a good cupcake. I'm going to stop typing and go eat another...

Exquisite Pizza Sauce

Really good. I took the advice of other posts and doubled the recipe to make my two pizzas -totally unnecessary! I half half left over and froze it. We LOADED on the sauce too. My pizzas were only 12", though. Awesome sauce. I left out the anchovy paste becasue I couldn't find any, and added a bit more marjoram than called for. Awesome.

I added garlic powder to the mix and really enjoyed it. The outsides were crispy and the middle was still soft. I found it a little too thick for my liking, so next time I'll add less yeast and/or roll it out thinner.

Big Soft Ginger Cookies

I followed the recipe for the most part, but changed a few things: I added the tbsp of orange juice instead of water and shredded some fresh ginger into the batter as well. I never touch marjarine (the stuff's poison) and used butter instead. My family avoids wheat, so we use spelt flour for most baking we do. I also used real unprocessed cane sugar instead of white sugar. These cookies had a great taste, but I feel that they needed a bit more of a flavour kick -even with the fresh ginger I added. I'll be making these again, but adding more spices. Also, I flattened some, and left others in balls to flatten on their own in the oven. I found that the ones I flattened were too dry. Let them go on their own and you're guarenteed a chewy, but fluffy cookie.

Best Brownies

I really like the taste of these brownies -my issue is with the consistency. I read other reviews and didn't over mix, used raw cane sugar instead of white sugar, but stuck to the recipe other than that. They just cooled from being cooked and I find them too much like a cake. They should be thicker in my oppinion. My edges were a bit dark and I cooked it in an 8" round glass dish. Maybe they just happened to over-cook? If I make this again, I'll be altering it so I get a 'fudgier' brownie. *edit* I re-made them and hardly mixed them. They were fudgier and VERY good.
