Cranberry Orange Loaf

Delicious Christmas bread. I doubled the recipe, made in 5 small (gift-size) bread tins, and cooked for about 35 minutes. Came out great! I used dried cranberries but really see how fresh ones would make it prettier.

Fruit Oatmeal Cookie Bars

These taste nice, but look rather flat and dull. I followed the recipe and used raspberry jam, but these are average. Not sure I'd make these again, although perhaps following some of the other reviewers' suggestions may help.

Baked Macaroni and Cheese with Tomato

This is a fairly easy, fairly healthy mac & cheese recipe. My changes: I used Barilla Plus mac elbows and added ground Flaxseed to the breadcrumb mixture, as well as less butter than called for. I also added 1/2 can of diced tomatoes. Overall, it was tasty and I would make it again... although my picky eaters ate less (due to the tomato) than they would of boxed mac & cheese :)

Scottish Shortbread II

So buttery, so delicious! These are incredibly easy to make and stay very well in a seal-tight container. Bet these would even freeze well. Highly recommended!

Garlic Chicken

My picky eaters even ate this! Very moist and very yummy. I didn't think it was too heavy on the garlic at all. Will make this again for certain!

John's Broccoli and Ziti Casserole

As other reviewers stated, needs a little extra something. I added tomato sauce and some additional spices, as well as leftover chicken breast pieces. That helped, but still a bit dry. Will try again, but change up the recipe.

Jambalaya with Fresh Fruit

Made this for dinner and really enjoyed the flavor, however the rice did not cook entirely. Not sure if it was the type of rice I used (traditional long grain brown), or if the ratio of liquid to rice was incorrect. Overall, enjoyed the combination in this jambalaya.

Chococonut Chip Cookies

These are really yummy cookies. I agree with the other reviewers, they are crispy on the outside and chewy on the inside. Similar to chocolate-chip cookies, but the coconut adds a little something extra. That and I added 3/4 cup of oatmeal, which I think was a nice touch. Maybe adding a spice would be good too. I'll make these again!

Oatmeal Raisin Cookies IX

If you want a healthy-choice cookie, this is it! Like another reviewer, I used whole-wheat flour and added cranberries & chocolate chips, and wow, what a combination! I also doubled the recipe and since there is no butter to beat, it's quite easy to make this dough (no mixer required). I'll be sure to make these cookies again and again. YUMMY.

Cheddar Baked Chicken

Very easy to make and tasty meal. I made it with my three year old son and it was quite fun for him to help and helped to get him interested in eating it too. I found 40 minutes was the perfect amount of time to bake. Will surely make this one again!

Glazed Meatloaf II

For a meatloaf, this was really yummy! I substituted the bread with 3/4 cup oats which added a nice nutty flavor to the dish. Great flavor, a bit sweet.

Chicken Pot Pie IX

This recipe was more time consuming than anticipated, but it was yummy. I'd recommend making at least 2 pies at the same time and freezing one.
