My Amish Friend's Caramel Corn

I have made caramel corn using several recipes that I thought were excellent. This recipes beats them all! It coats the popcorn evenly and isn't fussy at all. best of all, the taste is exquiite! Thank you for a new favorite!

Mexican Rice II- Zipped Up!

This simple yet flavorful recipe has become my family's favorite side dish with fajitas or tacos. I add just a pinch of saffron at the end for another wonderful layer of flavor. I just love the texture of this fluffy and authentic rendition of a Mexican restaurant staple. I have tried many recipes on this site, and this is my favorite!

Dill Pickles

Where is the 6 Star rating?! In a word, incredible! So simple, yet such amazing results! I prepared the recipe essentially as submitted by Sharon, but was forced to improvise when I could find no fresh heads of dill at ANY of my local stores. I also had no dill SEED, so relied solely on my baby dill heads, lots of it, to give that essential flavor. While they were dilly enough, my jars did SLIGHTLY resemble a kelp bed from the baby dill I used. Terrific punch of pickle flavor, and a crisp texture as a result of the soaking. I also inverted my jars in a low-level water bath to make sure I got a good seal, and I'm glad I did. I don't think the brife & shallow bath harmed the crispy texture, at all. Sharon, thank you for a wonderful recipe! It will be my new stand-by, and I can't wait to try this recipe using other veggies. Thank you!

Gale's Grilled Shrimp

After reading the wonderful reviews, I was anxious to try this recipe. I prepared it exactly as described, and marinated it for 3 1/2 hours- ample time for the flavors to delevop, according to the recipe guidelines. I LOVE garlic & I LOVE beer, so this sounded terrific! I was actually rather disappointed. The beer flavor was very subtle, and I used a fairly robust brew. The garlic was nice, but I'd have increased it a bit if I'd known how flat (no pun intended!) the overall dish would be. It was alright, certainly edible. We were planning to eat these as an appetizer. I also prepared an old standby recipe that evening (shrimp skewered with bacon & marinated in teriyaki sauce, then grilled) and those were a HUGE hit! The beer shrimp sadly languished on the plate... They might be better as part of a dish, like in shrimp tacos with other zippy ingredients. I really wanted to like these! So simple, and two of my favorite flavors. Just not anything remarkable, according to the friends we served them to.
