Ken Shoe Green Beans

These are tasty! I used frozen beans and light soy sauce, otherwise, kept the recipe the same. The green bean flavour comes out, as well as the spices. Yum!

Super Moist Pumpkin Bread

I LOVED this. I loved the toasted walnuts in it. I didn't change the recipe. It was my first time cooking with coconut milk. A tip--you'll have leftover coconut milk. Freeze it in ice cube trays to use later.

Buffalo Chicken Dip

Serve with Tostitos! We bring this to every potluck we attend and it always gets raving reviews. Can cook in oven or crockpot. We do either.

Firecracker Scallops

I did not care for this recipe. I bit into them and the first taste was good, and then it got bitter. I don't know what I did wrong--I may have overcooked them. I cooked the scallops in butter and garlic powder (not bacon drippings as I just baked turkey bacon). I will try this again. My chef friend said to cook in olive oil until light brown and turn. I'm not giving up; this is only my first time having scallop.

Crepes

I'm living in Vietnam for the year and I don't have an oven, measuring cups/spoons, and any kitchen appliances besides a two burner stove and a small fridge. This is quickly becoming a go-to recipe for breakfast as ceral and cereal bars aren't readily available either. :)

Harvest Salad

Thanksgiving morning my husband and I needed a recipe to bring to the family Thanksgiving meal. We found this one--we've never cut up ingredients so fast in our life! The salad was a hit--the avocado amazing. We're making it for Christmas dinner but we'll put the avocado and dressing on the side so the avocado doesn't get lost and people can choose the amount of dressing.
