Pumpkin Chocolate Chip Muffins

Just made these. Sounded strange with such a small amount of (coconut) flour. Oh, and I added one extra egg yolk. Recipe made 8 regular cupcake-size muffins. Ooey-gooey, chocolatey amazingness, served with real butter.

Beer Brats

I brought the water, onion, garlic powder, and pepper flakes to a boil, then simmered for 30 min. before adding brats. Finished them using my grill pan. Delicious!

Chocolate Chia pudding

Slow Cooker Beef Pot Roast

I used a smaller, boneless roast, also used coconut flour instead of AP flour to make it Paleo and Gluten Free. This was DELICIOUS. Chef John always brings it!

Chicken Savoy

Made this again last night, adding Italian Dressing mix and substituting Italian seasoning for the oregano. I also sprinkled with GOOD balsamic vinegar before baking, then adding more before serving. SO good!

Roasted Asparagus Prosciutto and Egg

This was incredible! Hubs made it as one of the 2 meals he cooks every week. I was amazed at how filling a few shoots of asparagus and an egg was. And the lemon zest pushed it right over the top. He made it exactly as written and we will eat this often. Chef John rules! Again!

Superb Sauteed Mushrooms

Cajun Style Baked Sweet Potato

Loved it! Used 2 tsp. home made Cajun spice (recipe from this site, of course). And about 1 tsp. unrefined coconut sugar. Cut the potatoes into large fries, placed them in large bowl, drizzled with the olive oil, tossed, added spices, and tossed again. Then baked at 350 for about 40 min, turning a few times. We will def keep this recipe. VERY flavorful! Thank you for the recipe.

Mulligatawny Soup I

We loved it. I did follow others' suggestions and doubled the curry. Actually doubled the entire recipe too. (But DO double the curry) I used homemade chicken stock. My husband thought it was REALLY good. He interrupted me to tell me how much he loved it. Good enough for me! I am SO making this again!

Mexican Chorizo

Made this exactly as written, including grinding the pork. I found the Aleppo pepper on Amazon. ($12.00 for 2.5 oz.) In all honesty, I will buy ground pork next time because my Kitchen Aid grinder did NOT handle it well. My husband loved the recipe, so there will be a next time. Thank you for the recipe, James. And COOKINGCOWGIRLS, maybe freeze the meat, as I will before using the grinder next time. That seems to make a big difference, rather than just chilling it in the fridge.

Coconut Flour Blueberry Muffins

Doubled the ingredients, but used 3 TBS raw honey, 3 TBS coconut sugar and 2 packets of Splenda for the sweeteners. Kept everything else the same. I did use butter rather than a spray for the pan. SO good.

I made this for my granddaughter's birthday. I freely admit that I ruined my Paleo diet by "tasting" this. Okay, I tasted it a LOT. I saved this for when I am feeling naughty. It's worth the guilt.
