Cheesy Zucchini Casserole I

The baking time took far longer than listed. Perhaps thin slices would bake faster. It was a little on the plain side. I recommend adding cooked diced chicken, two diced tomatoes, and some fresh basil.

Panzanella Salad

I had never heard of this before, then suddenly this summer, everyone was talking about bread salad. Delicious! I despise green olives, so I substituted black olives, but everything else was exact.

Vegetable Lo Mein

This was easy to assemble, and the family enjoyed it. It took a little over 45 minutes to cook down, so this is not the fast recipe it appeared to be. It also was a bit salty for my taste. Next time, I think I'll try low sodium soy sauce.

Slow-Cooker Chicken Tortilla Soup

This soup is amazing. I use turkey cutlets and veggie broth instead of the chicken. The turkey cooked into the crockpot; I skipped the precooking step as other reviewers suggested. I will definitely be making this again.

Broiled Tilapia Parmesan

Ham 'n' Brie Sandwiches

This was a great way to use some brie we had left over from a party. The mayo/mustard mixture is quite good, and we have used it for other sandwiches with good results.

White Bean, Spinach, and Barley Stew

This is a very thick, healthy stew, but it was a bit bland when I made it exactly as written. On the second try, added a vegetable bullion cube, increased the pepper to 1 tsp, and added some salt and pepper. With these additions, it was great.

Cabbage Kielbasa Supper

This is a very good recipe, but a little bland for our family as written. When I made it the second time, I added garlic powder, a little dry mustard, and extra pepper, and it was great. I also frequently add sauteed mushrooms, especially baby Bellas if I can get them.

Alienated Blueberry Muffins

These were OK, but I had many of the same problems others reported. I rinsed and floured the blueberries, but they still sank to the bottom which made the muffins tear apart from the weight. I used fresh baking powder, but they still failed to rise. The batter tasted sweet, but the muffins did not. I will keep looking for a better recipe.

Creamy Spiced Coleslaw

The mayonnaise taste was a little too strong. On the next batch, I reduced it slightly, and it was much better. The seasonings work very nicely together.

Soft Gingerbread Cookies

This is a keeper! I followed this recipe exactly, and the cookies were sturdy enough for my three year old and her 2 1/2 year old friend to decorate (only three broke out of the whole batch). They were still chewy a few days later. They were a bit spicy, but that's what I expect in gingerbread.

Chicken Pot Pie III

This dish was fantastic except for the Thyme-1 tsp is a little too strong. I'm not the kind of person who is afraid of seasonings, but it just didn't seem to fit well. Next time, I will omit that and add salt and pepper to taste.

Chicken Wild Rice Soup

This soup was fantastic. It was very thick and hearty. With some crusty bread, it makes a great meal on a cold day. I added a little salt and pepper to taste, but didn't change anything else.

Hot Artichoke and Spinach Dip II

Wow! This dip is fantastic just as is. Sometimes for variation I use pepperjack cheese to spice it up, but it isn't necessary. If you want to have leftovers, make two batches and hide one, because this will disappear in a hurry.

Pumpkin Wheat Honey Muffins

I've been looking for a good recipe for pumpkin muffins, and I've found it! These turned out moist and delicious. I skipped the raisins bc we don't like them, and I used a whole can of pumpkin--I never know what to do with the little bit that is left over. I also used cinnamon, nutmeg, ginger and cloves as another poster suggested instead of the pumpkin pie spice since I don't buy that. These turned out fantastic, and I was so excited about using whole wheat flour.
