Creme Brulee French Toast

Really good! I made this for overnight guests and it was perfect with coffee and fruit for breakfast. VERY SWEET, definitely could cut back on the sugar and still have a great dish.

Slow-Cooker Chicken Tortilla Soup

YUM! Perfect soup for a cool day. I omitted the onion and added black beans, and it was super good! I love that this recipe doesn't call for packets of ranch seasoning or anything, because I like to be able to control the spices and salt in a dish, and this recipe's seasonings are perfect. Definitely a keeper.

Marinated Grilled Shrimp

Yet another five stars for this great recipe. I took the suggestion of other reviewers and used ketchup instead of tomato sauce, since it calls for such a small amount. However, I wish I had made it with tomato sauce and doubled the marinade, to use half as a sauce over the pasta I served the shrimp with. My hubby said it was the best shrimp he'd ever tasted. Will be making again!

Chicken Francese for One

So tasty! I love the tangy saltiness of the dish. I used three chicken breasts cut in half and pounded flat, and kept the other measurements the same. I also added a clove of garlic and a shake of kosher salt. Like other reviewers, my sauce didn't get creamy or thicken much, but I used canned Parmesan instead of fresh, and it doesn't melt the same way so I wasn't surprised. It still tasted great!

Joey's Peanut Butter Cookies

These were not the best peanut butter cookies I've ever made. I couldn't find my recipe so thought I'd try these, and I was disappointed! I didn't use the whole cup of peanut butter, but the dough was still extremely sticky and difficult to work with. I really don't think adding a whole cup changes the flavor much, so I would cut down on the pb to make the dough more manageable. The cooking temperature of 375 was a little too hot as well. Wish I had just called my mother for the recipe I had lost instead of making these.

Ninety Minute Cinnamon Rolls

These rolls are definitely best on the first day, when they're nice and warm from the oven. Thankfully, they're so good that you probably won't have the problem of leftovers. I used a 9x13 pan and actually made 16 rolls to feed a crowd. Tasty!

Cheeseburger Buns

This is a great basic yeast dough recipe - I started with the basic dough, and instead of ground beef and cheddar cheese, I stuffed it with shredded chicken, caramelized onions, and brie cheese. They were delicious! You could easily use any type of meat/cheese/veggie combination you have on hand.

Mini Cheesecakes I

I'm not normally a cheesecake lover, but I made these for a party and they were a big hit. The recipe made 16 regular muffin sized cheesecakes. I followed the recipe exactly except for using a graham cracker crust instead of vanilla wafers, and baking for a few extra minutes to compensate for the bigger muffin size. Great for parties as easy finger food, and nice to be able to make them ahead.

Skinny Scalloped Potatoes

As far as flavor is concerned, these are super for a little healthier version of scalloped potatoes - my hubby didn't know the difference! I also sprinkled a little Parmesan cheese between the layers to give it an extra kick of flavor without too much guilt. I did have to cook a little longer than the recipe says, but since I had time and kept an eye on them, they turned out great. Definitely let it sit for a few minutes to firm up before serving, or it'll be potato soup on your plate. I'll be making these again.

Molten Chocolate Cakes

Make sure not to overcook these! When cooked right, they're excellent - just like what you'd find in a restaurant. Perfect with some raspberries or strawberries and a dollop of whipped cream.

Crusty French Bread

I wasn't quite sure what consistency the dough needed to be before baking, and I think I should've kneaded it some more. I was hoping for a nice baguette-style loaf, but it spread out a little bit and didn't get the crunch I was looking for, even with the egg wash. Of course, that could be because I'm a novice at bread making. I also cut down on the sugar and used just 1 Tbs, but it was still a bit sweet.

Blackened Chicken

I used my cast iron pan and seared for 2 minutes on each side, then put the pan and all into the oven for about 8 minutes more. No need to switch to a baking sheet. I had two large chicken breasts, and I cut them each in half and pounded them out so they'd cook more quickly. I also didn't have each of the spices, but I used what I had of them, plus garlic powder, and it turned out great! I'm looking forward to the leftovers over pasta tomorrow!

The Best Banana Pudding

I thought the sweetness overpowered the banana flavor, so I think I'll try leaving out the sweetened condensed milk next time. Also, I only used 4 bananas and didn't use the whole box of vanilla wafers either. It's definitely a great recipe!

Scalloped Potatoes and Onions

I was so hungry for scalloped potatoes and had never made them myself - but this recipe was so easy and delicious! I used sour cream since I was out of mayo, and added parmesan cheese and fresh parsley to the top for the last few minutes in the oven. Great recipe!

Granola Cereal Bars

I've been looking for a recipe that has more substance than just the rice crispy cereal, and this did the trick. Instead of using brown sugar and corn syrup, I melted 30 large marshmallows with 1/4 c. butter. Also, I omitted the peanut butter and used it in a glaze on top instead. Turned out to be very tasty!

Peanut Butter Glaze

I used this recipe to top my rice crispy granola bars, and it turned out very well. If the glaze is too thin or separates, you can easily adjust the sugar or peanut butter to make it a little thicker. It tasted great!

Chewy Granola Bars

These were a little bit crumbly, but overall a very good granola bar! I like to make my own so that I know exactly what I'm eating, and the crumbles were worth it. Next time I might bake a few minutes less for a softer texture.

Easy Pancakes

If you let the batter rest for 5 minutes or so before you start cooking it, the baking powder will have time to activate. Without the rest time, you'll end up with a runny batter that's hard to control on the griddle. The pancakes could use some extra flavor from buttermilk or vanilla, or fruit added to the pancake while it cooks. Overall, this is a decent basic pancake recipe.
