Coconut-Cream Cheese Frosting

My husband licked the bowl and commented any cake I make for him he wants this frosting on it. I did use the coconut flavor & it was perfect. I used it frost the coconut cake mix cake on this website-so did not add shred coconut. Great reviews from co-workers!

Creamy Coconut Cake

I made this for work and everybody loved it. I only used about 1 cup of mixture on each 9"cake I made. I frosted it with a coconut frosting recipe from this site - so I could more easily decorate the cake.

Whipped Cream

Delicious - almost tasted like lightly whipped vanilla ice cream. I used heavy cream (not the kind that said whipping) and had to beat with hand mixer for about 5 minutes to get the stiff peaks.

Spaghetti Carbonara II

Hubby says 5, I say 4.5, because I felt like it was missing a little something. Hubby said missing something probably because I used the pre-cooked bacon so didn't have much bacon grease. Close to restaraunt flavor though. I did mix the cheese in with the eggs, and when I mixed it in, I had it on the medium-low heat and constantly stirred for 5-6 minutes, and did not have any egg pieces in it. Also did a little shake of nutmeg. Overall, very filling, think the cream may be too much for me. This is a keeper and will plan to serve to company in the future.

Peach Cobbler III

Very bready. I used fresh peaches. I decreased the water to 1 cup as others suggested, and heated it to dissolve the sugar. I'm looking for the perfect recipe I made 2 years ago, but this wasn't it. I'm going to keep trying other recipes from this site.

Classic Egg Salad

Very good. I did add about a 1/4 tsp dijon mustard and sugar, and I used fresh onion and chopped it up with the celery in my mini food processor. Didn't have time to refrigerate before eating and still very flavorful. Served on potato rolls, and enjoyed very much by myself, hubby (he added chipole hot sauce to his for more spice) and 3 year old daughter. Thanks for the easy, fast and economical recipe!

Lori's Spicy Chipotle Lasagna

Very Hearty! A keeper for company. My husband has asked me not to make regular lasagna again. I halved the recipe, only made 4 noodles (boiled before baking), 2 layers and baked in a 1.5qt oval dish. I found the chile in the mexican section of the store. I would use diced tomatoes next time to avoid large tomato pieces. Also skipped the fresh herbs to save on cost (which is the main reason for my 4 rating) - for 1/2 size lasagna, cost about $25 with all the ingredients, particularly the variety of cheeses.

Chocolate Chip Pumpkin Bread

This yielded for me 2 dozen small (slight rounded top) muffins and 1 8x4 loaf - great for sharing with family and friends. The pumpkin flavor is not strong which is probably why those who don't like pumpkin liked it. It is a light pumpkin spice flavor. I increased the regular chocolate chips to 1 and 1/2 cups, becuase the one cup did not look like enough to me, and it was good this way (may try mini chips in future). Also can't wait to try the coffee can baking method.

Peppered Shrimp Alfredo

Super delicious. Have had leftovers for lunch for 2days now. My husband made this and also added some lobster, skipped the cayenne pepper (3 y.o. eating it too), used whole milk over cream, used linguine instead of penne, used baby bellas and used a parmesan/romano mix. The red peppers gave it a delicious sweet flavor, and I like having the peppers/onions/mushrooms in there to get in some vegetable servings. Agree with comments of restaraunt quality.

Great Garlic Bread

This was good and I will make it again. I did not have french loaf - so used english muffins. I cut the recipe in half and put 2 teaspoons on each half of english muffin (3 muffins or 6 halves). I put mozzarella on some and parmesan on the others and prefered the mozzarella.

Pretzel Turtles®

So delicious and so easy! Very much like a turtle candy, which I love. I used square (snap) pretzels, rolos and chopped pecans. I did as others suggested and topped with pecans before baking, and only baked for 3 minutes - so they weren't too melty. With the chopped pecans, I had to put a couple pieces on each. Will try the Dove suggestion next time and also try the whole pecans so they may look a little neater. Definitely double or triple the recipe, as they are sure to get eaten and it doesn't take much time to make more. You can easily fit 40 or more on one large cookie sheet.

Italian Spaghetti Sauce with Meatballs

Overall, not very time consuming, compared to cooking a sauce all day. Very chunky sauce, sweet in flavor. I used 4 - 14 oz. cans of diced tomato (instead of whole tomato), and can't imagine how much more chunky it would have been with whole tomatoes. Meatballs tasty, but also sweet. I used ground turkey and added a tablespoon of olive oil - so they wouldn't be dry as others commented. May make again with some alterations (more spice), but when in a hurry, will still use jarred sauce and doctor it up.

Cheesy Italian Tortellini

I was disappointed. Usually something with so many good reviews comes out good. The sauce was good, but the tortellini mushy/pasty. I may make the sauce in the future, but not add any pasta to it, and cook the pasta separate.

Slow Cooker Cranberry Roast

SO EASY & SO DELICIOUS! I made this for Christmas Eve dinner. I put it in at 10am before going to visit family and it was like a gourmet meal waiting for us at home. I disagree about it tasting like BBQ or being too sweet- it was more of a gourmet flavor to me - like something you would get at a nice restaurant. Also easy to pass on to friends with so few ingredients to reemeber.

Brunch Potato Casserole

Very good. I halved the recipe and made it at night and refrigerated it to cook Christmas morning, and it worked out well. Cooked for 1 hour and was ready to eat once all the presents were opened. I used a package of shredded cheddar cheese instead of processed cheese. Next time: will try frozen potatoes to save time (boiled cubed potatoes for 10min), will add salt and pepper for more flavor, may add some eggs (per my husband's request).

Bread Pudding III

I recently had bread pudding for this 1st time in new orleans with a whiskey(?) sauce and it was so delicious I had to try to make it at home. It reminds me of the flavor of french toast. I halved the recipe because we're a family of three, and still had to put it in a 1.5 quart dish, which I would go larger next time because mine came out somewhat mushy, even after baking for 35min. I also used white bread and apple cinnamon bread, and no raisins. Overall good, but may try a different recipe next time.

Famous Chicken Francaise

Very good. Definitely pound out chicken. I rinsed the chicken, floured, egg washed and floured again, then fried in olive oil. Simmered in sauce and breading did not fall off - I think you have to try not move the chicken while it's simmering. Served with buttered and lemoned spaghetti. Husband really liked it too. Also very easy & quick.
