Blueberry Zucchini Bread

I say 3 stars, my 7 year old daughter says 5 - so it gets a 4. I had both blueberries and a zucchini I wanted to use up - so tried this. For me it was a little bland and the blueberries didn't pop with flavor as I hoped. I did used a mixer to mix all but the blueberries - so maybe that just melded the flavors together too much. I like that it made 2 (regular size) loaves so I had one for home and one for work - they were both all eaten.

White Chocolate and Cranberry Cookies

The batter is delicious. I used vanilla instead of brandy. I broke up white chocolate bark I had which made some small pieces so may have limited the white chocolate flavor - so will def use white chocolate chips next time. I made some chocolate and butterscotch chip cookies out of the batter too but didn't love it.

French Toast I

Reminds me of french toast from my childhood. I had some homemade thicker and denser bread from a restaurant. I let each piece soak for about a minute. I cooked it on the griddle set at 325 for about 5 minutes each side until golden brown.

Pizza Casserole

My husband loved this, but I thought it was more like a fancy hamburger helper. I added mushrooms and used double the hamburg. Our favorite pizza to order is hamburg, pepperoni and mushroom - so we definitely like the flavor combination. With increasing the ingredients, I will use 2 jars of pizza sauce next time (I used one and a can of tomato sauce this time). Also, I will be sure to buy the largest noodle next time to try to make it "doughier" or even try a different type of noodle as others have done. My daughter (7 y.o.) also liked it a lot - she had the leftovers for lunch the next day.

Overnight Blueberry French Toast

Made for Christmas morning. I used Italian bread. I didn't really love the cream cheese in it - so may look for a French toast recipe without it. I didn't make the sauce either so maybe this would have made it better

Sauteed Rice with Kale

I have been wanting to try kale but wanted to do so with flavors I already know I like. This was super delicious, and made the house smell good. I wish I took a picture to post because mine looked more heavily weighted with vegetables versus rice (I'll do it next time). I also may try this with brown rice (the downfall to that is that it takes longer too cook). I would definitely make this for guests and/or a pot luck. The only thing is I would say is it's not quite 6 servings (maybe if served 1/2 cup - or less - each), but my husband, daughter and I ate it all at dinner.

Basic Ham and Bean Soup

Simple and delicious. I actually used this as a base and did a few things different after reading another recipe (The best bean and ham soup, but didn't want to cook for 10 hours). My husband thought it was more ham stew then soup. I used 8 cups of homemade turkey broth (instead of water), 16 bean variety and soaked overnight (instead of northern), 5 carrots, 3 celery stocks, 1 can of diced tomatoes, 2 tbsp worcestershire sauce, 2 tbsp spicy golden mustard (instead of mustard powder), 2 tbsp brown sugar, vegetable broth to cover ham bone, and deli baked ham sliced thick and chopped. Yes, I know this is pretty different but again I liked the sound of the other recipe, but just didn't want to cook for 10 hours :).

Pumpkin Pancakes

Nothing too special to me. I would use the idea for adding pumpkin puree to pancakes in the future to get the extra nutrition, but overall the flavor was bland.

Banana Crumb Muffins

I expected more with so many reviews and so many stars. These were ok - the flavor was a little bland, the muffin was a little spongy (not dense which I'm used to with banana recipes), and the crumb topping was mushy/wet. I may try again and read through more reviews such as putting the crumb topping on later.

Sam's Famous Carrot Cake

I teetered between 4 and 5 (I wish there was 1/2 stars) only because this didn't have the strongest carrot flavor, maybe decreased a little because of the mix of all the fruits included but nonetheless it was very good. I did add nutmeg and simmered the raisins in OJ as another reviewer suggested. I may try food processing some of the ingredirents next time for a more melded flavor instead of getting different bites of fruit on each bite. It made 2 thin 9 inch rounds and 12 cupcakes. I used the cream cheese II frosting recipe from this site but also added a 1/2tsp of almond extract which was awesome. Very delicious and I've been asked to share the recipe.

Flourless Peanut Butter Cookies

Yummy is right. I made these for my husband for father's day, and he ate 5 at one time before realizing it. I also had my fair share. I doubled the recipe and it made 48 cookies, and this was a mix of teaspoon and tablespoon size cookies - so I would have been fine without doubling it. They are not very pretty if you don't smush them with a criss cross with a fork, but they still taste very good. Stick to the eight minutes(maybe nine depending on the size), because they don't really brown on the edges to know that they are done. Mixing was done best with a wooden spoon or spatula. Just because, I added a teeaspoon of vanilla. So yes very good and very simple - a keeper!

Fluffy Pancakes

I ran out of mix and had to find a recipe to make them on my own, and this was superb. Although more time consuming then a mix, it is worth it. The butter gives it such a rich and savory flavor. I've added a dash of vanilla too which was good. I use butter to coat my pan instead of cooking spray to get nice brown edges on the first sides of my pancakes. I also add chocolate chips for my daughter (I do it after I put the batter on the pan so they are evenly distributed and don't sink and burn). YUM!

Irish Soda Bread

Very dense bread. I'm not sure if you're not supposed to add all the wet ingredients because my dough was very wet (like a batter), and not sticky. I could not make the cross on the top because of this. I only used 1 cup of raisins, and did not use caraway seeds (because I did not have them). I did like cooking it in my 9 inch cast-iron skillet. I have a recipe from my grandmother that I will stick to over this one.

Ratatouille Bake

I made this as a side dish for company - it was enjoyed by all. It was nice to get a variety of vegetables in one side dish, but it was a little mushed together (mushy). If I make it again, I will make sure to stick to or cut back just a little on the cooking times.

Big Soft Ginger Cookies

Very delicious and addicting :). Mine did not come out like a lot of the pictures, mine were flat and never really got puffy, but not sure if this was because my baking soda was old. I doubled the recipe because I wanted more then 15 (as the recipe states) and ended up getting 60 by make them 1 inch. They were soft for days which is why I liked them so much - I'm not a fan of crunchy ginger cookies.

Tangy Slow Cooker Pork Roast

A little bland. I doubled all the spices (per other reviewers), but also the water too and maybe should have left the water at 1 cup. I used a pork tenderloin, not pork loin roast and don't know if this would make a difference in flavor or moisture as the meat was a little dry and had to pour crock pot juices over it. I cooked with carrots and potatoes, but it made them a sweet but spicy and less desirable flavor. Likely will not be making this again.
