About this Cook
I am a mom and a retired grandmother. I love to cook, and since retiring have more time to perfect things like homemade pasta and baking skills. I am still trying to learn to make a successful, really crusty bread with lots of holes in it! This seems to be my biggest cooking challenge!
My favorite things to cook
I love to make Italian food. It is the food of my childhood and I believe the main reason my grandparents, aunts,uncles and parents all lived into their late 80's. I love making fresh pasta for manicotti, lasagna etc. I make wicked meatballs, spaghetti sauce, and have recently attempted my own homemade Italian sausage. Life is good!
My cooking triumphs
I made my family very happy last Easter with Ham, manicotti and the Cannoli Cake recipe from this website. I also made Asparagus with my own Hollandaise sauce from this website. It was all very successful and I looked like a Rock Star to my son-in-law!! Thanks Allrecipes!
My cooking tragedies
A terrible spinach souffle recipe tainted a delicious Rib Roast dinner on Christmas Day, but thankfully we had enough other sides to forget about that yucky dish. Sometimes it doesnt work out, but that is OK, life is a learning journey.

Bowties with Italian Sausage in a Cream Basil Sauce
This is a recipe I have used for years, except we use heavy cream, it is richer. It is a family favorite and I highly recommend it. We also add 2 tablespoons chopped fresh flat leaf parsley and instead of fresh tomatoes, we use 1 11oz. can of petite diced tomatoes. Anyway you do it, you will love it. (We also use 1/2 cup of parmesan instead of what the above recipe states)

Thanksgiving Leftover Stuffed Shells
Family loved it the weekend following Thanksgiving. Very rich and delicious!

Banana Cream Pie I
Do not Bake this pie! Once the pudding is thick in the saucepan, pour it over the sliced bananas and cover it with a film of plastic wrap, let it cool in the refrigerator, it will set up like pudding does. I always use flour, as I like the flavor it imparts. I also always spread freshly whipped cream sweetened with a little bit of sugar, but only spread on the whipped cream just before serving, as it does not store well in the refrigerator. I make a regular blind baked pie crust, but any type of baked crust would be great. I only gave this 4 stars instead of 5 because the baking of the pie was an extra unnecessary step. Again, the pie does not have to be baked.
