Mushroom Lentil Barley Stew

As is, soup is delicious and makes great leftovers. Next time I make this I am going to completely cut out the button mushrooms and use either solely shiitake mushrooms or a combo of shiitake and oyster mushrooms.

Followed recipe and method exactly but cut the tomatoes in half to make it for 3 servings instead of 6. Next time- would add more bacon and more red pepper flakes. Tasty!

Amazingly Easy Irish Soda Bread

Followed recipe to make the dough exactly, and the taste was amazing. Wouldn't change anything with that. Used dough hook with the KitchenAid and it was super easy! In order for the bread to cook all the way through without over-browning the crust, the formed ball definitely needs to be more flat than tall. I reduced the oven to 365 (to avoid too brown of crust and raw middle) and it still took over an hour to bake completely.

Roasted Garlic Lemon Broccoli

Loved the texture and flavors of this! Followed ingredients exactly, adjusting for more broccoli. I used 3 whole heads cut into florets and there was only a tiny bit left over with four of us. Definitely doesn't feed 6, so adjust accordingly.

Sloppy Joes

This is the best sloppy joe recipe I've ever had. Make sure to use a high quality barbecue sauce (no corn syrup or high fructose corn syrup); I used a habanero kind. The only change I made was to chop some carrots and bell peppers in the food processor and added that at the same time as the ketchup and other sauce ingredients.

Thai Chicken with Basil Stir Fry

I only used half the amount of chicken because that's what I had but left everything else the same. Only had a little bit of sauce left over, so if I make it with the full amount of chicken I'll definitely double the sauce. I love fresh basil so would probably add some extra of that as well.

Serbian Ground Beef, Veggie, and Potato Bake

Followed the recipe exactly. The vegetables ended up being a bit mushy but I could still taste them and feel the texture. I'll probably drop the water and use all red wine next time. With this recipe, using fresh, high quality ingredients makes a huge difference. Meat from the butcher, veggies from the farmer's market, and good wine really bring out the desired flavors.

Slow Cooker Carnitas

The meat itself was slightly bland but I think if I had used less than the listed amount of cooking liquid it would have been better. We had a ton of cooking broth left over after it was done. Next time I'll cut the chicken broth amount some and hopefully the flavors of the spices will be more prominent.

Pesto Pita Appetizers

Tasted great! When baking the tortilla chips, I'd recommend putting them on a broiler pan or metal cooling rack on top of a baking sheet so they are crispy the whole way through and don't get soggy.

Healthier Bran Muffins

Pretty bland. We put apple butter on top and that made it taste better but next time I would definitely add honey, some raisins and walnuts and cinnamon to make it more flavorful.

Chipotle Chicken

Made it exactly as the recipe said and it was delicious! I made it for my family and they said it should be renamed Chipotle Chicken with Spinach Cream Sauce because it tasted like something you would order in a nice restaurant in New Mexico. Next time I will add some corn to the sauce for additional texture. Delicious!

Garlic Dill New Potatoes

Made exactly as recipe says. Definitely needs more dill if you're using fresh and I cooked the potatoes about 15 minutes. If you don't like really strong garlic taste, I would reccommend sauteing the garlic before mixing everything together. Other than that, very tasty and will make again

Bananas Foster II

Delicious! A little too runny and saucy for my taste, though. I may not have let it thicken enough before putting bananas in though, so could be my fault. the vanilla and cinnamon gave it a little something extra that I haven't tried with bananas foster before. Very good! Oh, I used coconut rum instead of regular and it tasted really good :)

Chicken Piccata with Artichoke Hearts

Very easy to make and tasted delicious! The artichoke added an interesting taste that complemented well, yet still leaves the standard piccata taste. Made it for roommate dinner and the girls all loved it. Didn't change a thing in the recipe and it was perfect. Served with pasta
