Crispy Pork Carnitas

This method is spot on. The pork was so tender! I'm not sure the cinnamon works here. I found that with the five spice powder the cinnamon was just a little over the top. When I make this again (and I will) I think I'll omit the cinnamon and maybe add 1/4 tsp of cayenne instead to balance the flavor of the five spice. Thank you for sharing your recipe!

Creamy Chicken Enchiladas

I just made these. I know they are not in any way authentic, but they were good! I had leftover Costco rotisserie chicken, so I used that. I did not have the cheese in the ingredient list, so I just used a shredded Mexican blend and added 1 tbsp of Philly cream cheese to the mixture when it was in the pan and stirred to melt it. These came together very quickly and were simple, delicious comfort food. Thank you for the recipe!

Cauliflower and Egg Salad

I enjoyed the taste of this; however the texture was a little off putting. I think this is a great idea and a good recipe - the flavor is excellent! It is just not for me. I omitted the mayo as I cannot stand it, and used Greek yogurt instead. (I added a tad more mustard to make up for the tartness of the yogurt.) Thank you for sharing your recipe!

Blueberry Crumb Pie

This was exceptional! I used fresh blueberries (almost 3 pints) and an oil-based pie crust. I might've used a bit less lemon juice and I added a splash of almond extract. Thank you for sharing your recipe!

My Favorite Beet Salad

This was my first time ever trying beets. I really liked this! I cheated a little and used pre-cooked organic beets from Costco, so this took less than 5 minutes to prepare. Omitted the avocado as I did not have any, and decreased the olive oil to 1/4 cup but was otherwise true to the recipe. My husband and I ate the whole bowl. Thank you for sharing your recipe!

Quinoa Asparagus and Feta Salad

I really enjoyed this! Followed the recipe as written. Served with a balsamic grilled chicken and it was a good match. When I make this again (and I will) I will add a little garlic and decrease the lemon juice a bit - just personal preference. Might serve this over wilted spinach next time. Asparagus Frittata

Since this recipe didn't have any reviews when I made it I was completely faithful to it. I think that if you make multiple modifications to a recipe then declare it is excellent you are really reviewing your version - not the original. That said, as written this recipe produces a frittata with a very nice texture. If I were to make it again, I would make these changes to suit my taste: this needs more asparagus, maybe 1/4 cup of parmesan, garlic (sautéed with the onion and mushrooms) and freshly ground black pepper. I think diced black or kalamata olives would be a nice addition too. I had this with whole wheat toast and fruit, but my husband ate it with leftover sriracha noodles (from this site) and said that it was a great combination. Thank you for sharing your recipe!

Easy Sriracha Noodles

I do not eat noodles, but my husband really enjoyed this! I made the recipe as-is, except used whole wheat rotini and sesame oil (instead of egg noodles and peanut oil), as that's what I had on hand. I served this with grilled chicken and steamed broccoli. He said he is looking forward to having the left overs for lunch tomorrow. Thank you for sharing your recipe!

Sweet Hot Mustard Chicken Thighs

My husband and I liked this, but my daughter wasn't a fan. I used balsamic vinegar instead of red wine vinegar as that's what I had so I reduced the amount by a bit. The chicken was flavorful and tasty, but for me the best part was the onions - after the chicken was fully cooked I mixed the onions from underneath it with quinoa. It was excellent! Best Bircher Muesli

My husband and I really like this! I scaled it down to 2 servings and used 1% milk instead of soy, but otherwise followed the recipe. I added fresh blueberries, some cinnamon, a sprinkle of nutmeg and a tablespoon of hemp seeds. Thank you for sharing your recipe!

Coconut Muffins

Confession #1: I despise it when people review recipes they've completely changed. Confession #2: I had to take a few liberties with this based on what I had handy, so I guess I'm one of those people. I read the reviews before starting, and most of them complained about dryness. Despite this, I proceeded with the liquid/dry ration as written. I used w/w flour, and halved the baking powder (3 tsps seemed like an awful lot to me). For the milk I used vanilla almond milk, as that was what I had. I otherwise stuck with the recipe except that my daughter dumped in quite a bit more than 1/4 cup of coconut - she ended up adding maybe 1 cup. Even with that, the batter didn't seem any thicker to me than many other recipes I've done (like, say, morning glories). I got 10 standard sized muffins out of this, and baked them at 350 for 15 minutes and they were perfect. Fluffy, tender and very coconutty! Thank you for sharing your recipe :-)

Pumpkin Brownies

This is REALLY close to Martha Stewart's recipe for pumpkin swirl brownies. Hers calls for only 1/2 cup of butter, 1 more egg and 1/4 tsp of cayenne. Otherwise they're fundamentally the same. That said, they ARE excellent brownies!

Hungarian Mushroom Soup

Not like this recipe needs another glowing review, but here it is anyway. This soup is OUTSTANDING! I even goofed up and dumped in a can of beef broth instead of chicken and it is still excellent. (Look forward to trying it the right way). My idiocy aside, I followed the rest of the recipe to the letter. Thank you for sharing this with us!

Easy Peach Cobbler

I decided to make this because of KALDIRRIS' review yesterday. Normally, an awful review will make me bypass a recipe, but in this particular case, the review was so absolutely unecessarily RUDE that honestly I was shocked and refused to believe that a recipe with a 4 star average with >150 reviewerscould be that bad. I'm not a peach fan, but hubby is so I made this for him. His rating is "a solid four stars." My only alteration was to use frozen peaches that I nuked in the microwave to thaw and get juicy. It also took closer to 35 minutes in my oven. THANK YOU for sharing your recipe with us, and I'm so sorry that another reviewer was so unnecessarily cruel.

Caramel Macchiato Ice Cream

Oh YUM! I'm not so much a fan of the drink, but love coffee ice cream so I figured I'd give this a go. I used FF half and half instead of milk because I wanted a creamier ice cream, but otherwise kept the ice cream portion of the recipe the same. I chilled in the fridge for 4 hours, then processed it in my kitchen aid with the ice cream attachment. While it was going and I was digging through my cabinet for the caramel, I had a stroke of delicious evil genius...I used Nutella instead of the caramel! I nuked about 4 TBSP to melt and stirred THAT into the ice cream. My husband is sitting next to me licking the bowl. 5 stars from him!

Cinnamon Griddle Cakes

Actually I'd give this 4.5 stars. I tossed out the corn syrup right off the bat (I'm anti HFCS and all it's cousins). I kept everything else per the recipe except used 1/2 whole wheat flour and added 2 TBSP milk to compensate for omitting the c.s. I was standing there looking at my batter and decided I was feeling lazy, so I greased a 10" cake pan, dumped it in there and baked at 350 for about 15 minutes. Flipped it out onto a plate, sliced it like a cake and served - it was excellent! Family really liked this one. Thank you for submitting!

100 Percent Whole Wheat Bread

This is great bread! I had to make some omissions based on what I had handy (no sesame, sunflower seeds or coconut oil. I tossed in some wheat germ instead - otherwise followed the recipe except for the shape...I got 6 sandwich rolls and 1 large bunny loaf out of this. Thanks for the recipe!

Dry Ranch Style Seasoning for Dip or Dressing

This is good! I made this as dip using one cup each olive oil mayo and light sour cream. I too used kosher salt (only 1/4 tsp) and added 1/4 tsp cayenne to give it just a tiny kick. It came out nice and thick so it didn't drip off the veggies. My mom, who normally hates ranch, really liked this! She said it was "so nice and herb-y instead of mayonnaise-y."

Buffalo Chicken Dip

Not that this recipe needs another good review, but I'm giving it one anyway. This was very, very good. I made it for my daughter's 7th birthday party today and my guests tore it up! I did 1.5 times the recipe, used 5 thin blsl grilled breasts that I shredded, neutschafel, Texas Pete's wing sauce and subbed blue cheese dressing for the ranch. I also crumbled in about 3/4 cup of really good blue cheese and to me that just MADE this. Served with celery, fritos scoops and tortilla chips. (Guests liked it best with the scoops) Will make again.
