Gingerbread Coffee

Tastes just like a gingerbread cookie was dunked in my coffee. Very easy to make. I didn't have whipped cream but I'm sure that would only make it 6 stars instead. I wasn't sure about waiting the full 10 minutes to let the mix refrigerate (impatient to try it) but I saw how the mix puffed up a little with the baking soda and turned a nice caramel brown color. Thanks for sharing!

Pumpkin Pancakes

I made these this morning and doubled the recipe so I could use 1 can of pumpkin (15 oz). I followed the recipe excepting I used a pumpkin pie spice mix in place of the allspice, cinnamon and ginger and a wheat/white flour mix in place of all white flour. They were a little thick (a little short on the pumpkin?) so I added about 1/3 cup more milk. The pancakes were fluffy and delish. I dipped them in just a little maple syrup. Freeze the leftovers with a piece of wax paper between each pancake for easy toaster breakfasts during the week.

Pumpkin Smoothie

Yum, I had fresh pumpkin puree and couldn't wait for the pumpkin to freeze so I just mixed up a half recipe for me to drink. Delicious! I used cinnamon with a little ginger and cloves and a dash of vanilla. Very filling too so will be good for a healthy afternoon snack to hold me over until dinner. I'll have to see about freezing some of the puree and trying it that way too. Thanks for sharing.

Butterscotch Raisin Bread Pudding

Made this for Christmas morning. I doubled it in a 9x13" pan because it looked so yummy. I used regular raisins, added about 1 tsp Cinnamon, and used about 1/2 c whole milk in place of the rest of the nonfat evaporated milk (1 can=1 1/2 cups). It was excellent. I served it with a dollop of plain yogurt, which complemented the sweetness very nicely. Very quick and easy. What a wonderful way to start off Christmas Day! Thank you for the recipe.

Pumpkin Casserole

Excellent. I reduced the sugar by half and served it for dessert with 2T half & half over each serving with a sprinkling of cinnamon/sugar on top. My 9yo son went back for more, and no extra toppings. Will definitely make again.
