About this Cook
I am married and have a son in elementary school and a daughter in high school who have to sample my food experiments at times. I provide childcare for 3 children ages 0-3 and serve meals for them that are healthy and developmentally appropriate.

Anything easy with chocolate.
My cooking tragedies
Making a meal for dinner with several things going at once. Something baking in the oven started on fire. I properly use the fire extinguisher and put it out, but everything cooking on the stove top had to be thrown out because of the extinguisher "dust" that went everywhere. "Let's go out to eat tonight!"

Gingerbread Coffee
Tastes just like a gingerbread cookie was dunked in my coffee. Very easy to make. I didn't have whipped cream but I'm sure that would only make it 6 stars instead. I wasn't sure about waiting the full 10 minutes to let the mix refrigerate (impatient to try it) but I saw how the mix puffed up a little with the baking soda and turned a nice caramel brown color. Thanks for sharing!

Pumpkin Pancakes
I made these this morning and doubled the recipe so I could use 1 can of pumpkin (15 oz). I followed the recipe excepting I used a pumpkin pie spice mix in place of the allspice, cinnamon and ginger and a wheat/white flour mix in place of all white flour. They were a little thick (a little short on the pumpkin?) so I added about 1/3 cup more milk. The pancakes were fluffy and delish. I dipped them in just a little maple syrup. Freeze the leftovers with a piece of wax paper between each pancake for easy toaster breakfasts during the week.

Pumpkin Smoothie
Yum, I had fresh pumpkin puree and couldn't wait for the pumpkin to freeze so I just mixed up a half recipe for me to drink. Delicious! I used cinnamon with a little ginger and cloves and a dash of vanilla. Very filling too so will be good for a healthy afternoon snack to hold me over until dinner. I'll have to see about freezing some of the puree and trying it that way too. Thanks for sharing.
