Homemade Marshmallows

Cabbage and Noodles

I love a simple recipe that tastes great! Husband and preschooler loved it as well. I bought a larger head of cabbage and added a little extra...that stretched the serving size a little farther without adding too many extra calories. I also reduced the butter by 1 tablespoon. Next time I plan to add more bacon but drain off a lot of the grease, and use salt and pepper before adding the noodles back in. This one's a keeper!

Colleen's Slow Cooker Jambalaya

I made this recipe exactly as written, and it was great! I used Tony Chachere's for the Cajun seasoning, and it was pretty spicy! I would maybe cut back on the cayenne next time. I also threw my cooked rice into the crock pot with the shrimp, and I won't do that again. It turned to mush. :(

Eggplant Parmesan II

I followed the recipe exactly as it is and was not impressed. The eggplant was bland with just the seasoned breadcrumbs. The texture was too firm, and there was way too much sauce. The dried basil on top added no flavor.

Quick Chicken Marsala

This was so tasty and easy! I lightly floured and seasoned the chicken before cooking it in olive oil (rather than butter). I also had sherry on hand, so I used that instead of marsala...I guess I actually made sherried chicken. Added a handful of sliced mushrooms, and it was fantastic! I served it over egg noodles to my husband and 3 year old son. Both thought it was "yummy".

Nita's Lamb, Green Beans and Tomatoes

I could not find lamb stew meat anywhere. I ended up buying a leg of lamb, cutting it off the bone, and freezing half of it. I threw all of the ingredients into the crock pot and cooked it on low all day. I added a handful of raisins (very yummy!)and served it as a soup with crusty bread and lemon, feta, and mint for topping. My real complaint is that the lamb was dry....but that's probably because I had to use leg of lamb...

Slow-Cooker Chicken Tortilla Soup

I added an extra 1/2 t cumin, a little extra cilantro, and a squeeze of lime juice. Even my 3 year old loved it...with cheese and "cream" on top, of course. :)

Mom's Simple Dumplings

I was looking for a recipe that would make drop dumplings as easily as Bisquick but without the Bisquick's fake ingredients. This is it! Perfectly soft and puffy. Only change I made was to use butter rather than shortening.

Basic Crepes

I wouldn't change a thing! Made beautiful and delicious crepes! We filled ours with spinach, onion, mushrooms, bacon, and a light smear of cream cheese. Yum! For dessert: cinnamon apples and sweetened ricotta.

Chocolate Rum Balls I

White Bean 'n' Ham Soup

A fantastic quick soup. I sauted the onion and carrot with a little garlic then put it in the crock pot with the rest of the ingredients. I used chicken stock instead of water, though, which made for a too salty result. Next time, I'll use stock but leave out the additional salt. It was a warm satisfying meal for my family when we got home from our Christmas eve church service. Will make again!

Sugar Cookie Frosting

I have to give this at least 3 stars for its manageability- it iced and hardened beautifully on the sugar cookie! However, the flavor was like sweet crisco. Better but still not great after an extra teaspoon of vanilla and a little butter. I'll keep looking for a better recipe for next Christmas.

Peanut Butter Kiss Cookies

I followed another reviewer's sugestion of dividing the sugar among white, brown, and confectioners. The cookies needed 14-15 minutes to bake and still came out VERY soft, but they didn't lose their shape. My only complaint is that I prefer a more cookie-like kiss cookie (but who can complain with so few ingredients!).

The Best Rolled Sugar Cookies

These cookies rolled out and cut very well, but the flavor could be better (That's even with the extra sugar and vanilla another reviewer suggested.). I found that rolling them closer to 1/4 inch made prettier cookies than the 1/2 inch, and they were still soft after baking!

Little Meat Loaves

I made these last minute and only had ground turkey. I also used a little basil, rosemary, and oregano in place of the italian season, and 2 cloves of chopped garlic and salt and pepper in place of the garlic salt. Still- very yummy! My only complaint was that the texture was less meaty than we prefer (a littler mushy). I'd definitely make it again!

Fluffy Pancakes

Awesome recipe! I used 1/2 whole wheat flour and 1/2 white flour and added a little cinnamon, a little vanilla, and fresh blueberries. You'd never have known they were wheat pancakes, because the seasoning was so good. Yum!

Baked Oatmeal II

I made this last year on Christmas morning, and the family loved it so much I'll be making it again this year. Not too crunchy or too soft. We ate it with milk in the bottom of our bowls. Yum!
