Sweet Potato Casserole II

Reviewed: Sep. 27, 2008
Really delicious. Per other suggestions, I halved the amount of white sugar, added a touch of vanilla and cinnamon, and used whole pecans. It was a big hit!

Tofu Parmigiana

Reviewed: Jun. 18, 2008
My husband and I really enjoyed this dish. It's very easy to make. I added some sliced mushrooms that I microwaved first to add extra flavor and as a shortcut used prepared sauce. The trick to getting the bread crumbs to stick is to make sure that the oil is hot enough when browning the tofu slices.

Like many others, substituted celery seed for poppy seed and I only had Hellman's mayonaise. It was delicious!

Strawberry Bread

Reviewed: Apr. 21, 2008
Delicious! After reading other reviews, I decreased sugar to 1 1/2 cups, baked it in a bundt, added a teaspoon of vanilla, and substituted 1/2 cup of unsalted butter for the oil. I made it more cake like and fluffy by creaming the sugar, eggs, oil and butter together first and then adding the dry ingredients until just mixed. My husband couldn't stop raving about it and it's excellent way to use leftover strawberries.

Chicken Breasts in Caper Cream Sauce

Reviewed: Jan. 21, 2008
Wonderful recipe. Substituted 1/4 cup chicken broth for part of heavy cream addition and did not rinse the capers for added flavor. Also used fresh dill and fresh lemon zest on sauteed chicken instead of lemon pepper.
