Seafood Risotto

used seafood stock and water and reserved clam juice from clams. only used clams Rice needed to be thickened at end. Don't use cheese, didn't want cream. Used 3T butter. perfect. Jeff and Lu loved, Ted not Nick liked it. I thought it was pretty good.

grill on kabob sticks just a slight spicey. everyone who tried, liked ted didn't taste it extremely simple great for quest. kabobing takes a while.

Turkey Breast with Gravy

Made this last Sunday and everyone loved it. It made a wonderful gravy. My only substitution was broth, not boullion.

Banana Bran Muffins

They defineatly were easy. I found they nutmeg to be too much and the banana not enough. I emptied the tins right away but found the muffins to be spongy. I would adjust the time/temp if I made these again.

Whole Wheat English Muffins

I changed the flour ratio to 50/50 and they came out quite good. Next I will try going w/3 cups whole wheat. The second rising didn't rise too much for me, either. So I put them in a warm oven, that seemed to help. I did have a problem with them collapsing as I placed them in the griddle. This is a keeper recipe. Thanks

Pollo Bianco

A Keeper for sure. I made this last night and my extremely picky teenager had seconds! After reading other comments, I too added more spices, course ground sea salt, course pepper, paprika, garlic powder, basil, and sauted the onions just alittle longer than 5 minutes. I also used chicken stock instead of water. This ends up being a very juicy, sweet chicken dish.
