Ham and Cheese Quiche

This was so good and extremely easy to make. I used pre-cut ham strips instead of the ham the recipe called for. I also used a ready made frozen pie crust and let it thaw for about 10 minutes and then poked holes in the bottom before filling it and it came out perfect. Only thing I will do differently next time is use fresh mushrooms or sauteed mushrooms. I think they would match the quality of the quiche better than with the canned mushrooms. I baked it on a cookie sheet and glad I did because it overflowed a little. We will definitely be making this again.

Maria's Stuffed Chicken Breasts

I absolutely love this recipe. It is now on the list of regular meals in my house. They always stay tender and the flavor is so yummy. Very easy to make. The recipe does make too much stuffing and I tend to throw out half of it though. My 3 year old twins even like it and it is an easy way to get them some spinach. :)

Ham And Cheese Frittata

This is very good and so easy and quick to make. Great for a busy night when you don't have a lot of time. I really liked the tomatoes on top. Thought it added a nice touch. Also, I've always made my eggs with cottage cheese and it was good to see it in this recipe. My whole family liked this recipe and will definitely be making it often.

Quick Gnocchi

I grew up making gnocchi with my Italian grandmother and she would substitute instant potatoes sometimes. I never knew a good ratio though so I was so glad when I found this because with real potatoes is a lot of work when you have 2 year old twins. I will definitely be making this again. I didn't need as much flour as the recipe called for. It does get very sticky but that is how it should be. After you mix it all together into a dough, if you put it on a floured cookie sheet in the fridge for at least 15 minutes, it will make it a ton easier to work with. It will get stickier as it warms though. Also, if you roll them 1/2" thick, they will be less dumpling like as some people stated. I found this recipe to be extremely good and will definitely be making them again!

Weekday Pot Roast and Vegetables

The best pot roast recipe I've made. It is the only one I make now. My cook time is usually 6 hours on high for a 2 lb. roast. I adjust the amount of vegetables to what we need. Usually more potatoes and less carrots. I add celery if I have it on hand. I also use 2 Tablespoons of basil instead of 2 teaspoons. It was on accident that I first did that and my family liked it better that way. This recipe is super easy and it always comes out tender.

Taco Seasoning I

This recipe is simply awesome! We have used it in the beef for tacos and for our chicken enchiladas as well. I will never buy store taco seasoning again. It does run on the spicy side so if you are not one for very spicy, I would recommend cutting down on the chili powder. I had every ingredient in my spice cabinet which was the reason I tried it in the first place and I'm so glad I did. The recipe makes plenty so you will have leftovers. Your food will not need as much as you would put in if it was a store packet. We used about 1-2 tablespoons depending on the dish.

Holy Smoked Bacon and Mushroom Penne

My family loved this recipe. My husband said he would eat this all of the time and he kept going back for more. Even my 2 year old twins ate it. I followed the actual recipe. It's even good as leftovers.

Easy Tomato-Basil Pizza

This pizza was sooooo good and extremely simple to make. I only made 1 pizza and I did change a couple of things. I also did not follow the amounts of ingredients 100% but it still turned out fantastic so it is pretty much fool proof. Instead of large tomatoes, I used 4 roma tomatoes seeded for one pizza and fresh basil from my garden. I also did not include mushrooms since I did not have any on hand and I left out the jalapeno. I used a yellow onion instead of a red onion. My husband and I devoured it and he said he loved it more than the pepperoni pizzas we always make at home. Can't wait to make it again. Thank you so much for this simple recipe.

BBQ Pie

This recipe was very good and extremely simple to make. Instead of Worcestershire sauce, I used Dale's sauce because I was out of the Worcestershire. I used red onion and thought it complimented the meal well. It is very filling. Not too sweet. Not too spicy. Not too saucy. I also added more cheese on top than the recipe called for because we love cheese.

Cornish Game Hens with Garlic and Rosemary

This recipe was pretty good. It was simple to make but the flavor was kind of bland. I would recommend brining them or marinading them before cooking. The hens stayed very moist though. Next time I will put garlic in it with the rosemary and lemon. It also didn't create hardly any drippings. It was an easy recipe to follow and I will make it again with some modifications.

Spanish Rice II

This rice is very good and easy to make. I have made it a few times so far and I will keep making it. It is so much better than the stuff out of the box. It just tastes more fresh. Also, it is cheaper to buy a bag of white rice and make it how I want then to buy a bunch of small boxes.

Pork Chops in White Wine

I really enjoyed this meal. The pork chops stayed tender which is a big thing for me. I don't like when they get tough. I did add minced garlic and I used fresh mushrooms instead of jarred or canned. The taste is just so much better. I also added onion. I cooked it with the lid off and it was not too watery or thin.

Five Minute Ice Cream

The flavor was really good and it was extremely easy to make but the recipe calls for so much sugar that it is gritty. I would cut way down on the sugar next time and I had to put it in the freezer to set completely because it was too thin for my liking. All in all it tasted very good and I will make it again with some modifications.

Tomato-Cream Sauce for Pasta

I really liked this sauce and it was extremely easy to make. I substituted half and half for the cream because that is what I had on hand. I also added red pepper flakes. I add that to all of my sauces because I like a little spice. I did think it was missing something though. Next time I will definitely add more garlic and maybe play around with spices a bit. It will be made again.
