About this Cook
I make bento lunches for myself and my husband every morning, and usually dinner in the evenings, too. I love to challenge myself w/new recipes that I found online here, from friends, or from a show on tv. I plan our meals out for the week so there's no more "what's for dinner?" being asked, and keep everything organized in a google calendar that I share w/my husband and a few friends who are curious about what's on the menu.
My favorite things to cook
roasted veggies (so easy! you know, roasted ANYTHING is good...), slow-cooker chili or stew or bbq, tamagoyaki (thin egg omelets that took some time to master making), and anything cute that I add to our bento lunches
My favorite family cooking traditions
making holiday cookies (I host a cookie exchange yearly), "zonker" (a cobbler-like dish I grew up eating at my gramma's), and my cousin's chili
My cooking triumphs
my first apple pie from scratch, w/lattice topping & made w/apples I picked in an orchard myself!
My cooking tragedies
when making brownies at a friends house, I accidentally added garlic-infused oil instead of vegetable oil; the resulting double-chocolate garlic brownies were some of the weirdest things 've ever eaten [and then, thrown out] :P

Ground Beef Enchiladas
I JUST made these and they're AMAZING. I followed the recipe near-exactly, save that I accidentally grabbed diced green chiles instead of jalapenos so that's what I added instead. I also used the tiny flour tortillas cuz thats all I could find - and I made 10-12 mini enchiladas out of the mixture, and still had leftover meat and cheesey goodness to pour on top of them. baked 'em 23 minutes and let 'em sit for a few more out of the oven - they're AMAZING. I could definitely see where the jalapenos would spice them up a bit more, and will try that next time (and I will read the label on the can a bit closer!). thanks for a fantastic and surprisingly easy recipe for enchiladas - this one's a keeper!!

Barbecued Beef
this was FANTASTIC. I didnt follow the measurements exactly, and added things to-taste, but wow-ee deelicious! I slow-cooked it together 8 hours while I was at work, then shredded the roast while pulling out all the fat. I also used a gravy separator to get the fat out of the sauce. Poured it all back into the pot for another hour, served w/mashed potatoes and broccoli. AMAZING leftover, too! Will be making this again!

Grilled Asian Chicken
this was deeeelicious! we're buried under 2'+ of snow right now, and I was looking for something a little more interesting to make than soup. this fit the bill perfectly, and while we didn't get to grill it, it turned out fantastically well sauteed. I am very much looking forward to making this again, marinating it a bit longer (I did aprx 20 mins while other things were cooking) and grilling it on our charcoal grill. the only variation otherwise that I took was mincing the garlic and ginger together to add to the sauce. mm mm mm!
