Bubba's Jambalaya

This is very, very good. I added the ingredients (minus the rice) and let it simmer for a couple of hours. I also added some flour and water to thicken it up a little bit. I seasoned it a bit more with some cayenne and pepper. Will make it again!

Fluffy White Frosting

Light, sweet, frothy and near perfection! I added one extra egg white because the eggs I was using were a little small and added slightly more vanilla than asked for. I used this to frost a chocolate layer cake and it was so good!

Grandpop's Special Chocolate Cake

This cake was super easy and every ingredient it called for I had on hand (BONUS!). I made a layer cake with it and frosted it with a white fluffy frosting. Very moist, easy and worth the calories.

Pig Pickin' Cake

This. Is. So. Good. My recipe calls for 1/3 cup of water, 1/3 cup vegetable oil and three large eggs (instead of four eggs and just oil) to be mixed in with the yellow cake mix. I make it in three cake pans, and frost in between the layers and on top I sprinkle pecans. It is SO pretty and ridiculously easy.

Army SOS Creamed Ground Beef

I grew up eating something like this...we called it "hamburger gravy" and we ate it over mashed potatoes. When I made this I added a chopped onion and two cloves of garlic (everything tastes better with garlic!). I also had to play with the seasonings because what was listed wasn't enough (for our tastes). I ultimately added a lot more pepper and salt and a dash of cayenne pepper. I also added a can of corn and served it over egg noodles. It was yummy!

Kentucky Butter Cake

This cake was super easy. I didn't care for it at first, so I sliced it up after a day or two and froze it. I liked it better the second time around...I think that the longer it sat, the moister it became. FYI, if you don't have buttermilk on hand, just use 1 tbsp. of cider vinegar then fill up the rest of the cup with milk and let it set for a bit and that will substitute the buttermilk.

Mexican Casserole

My four year old had seconds and asked if I would make it every night! I'm SHOCKED!!! I added a package of taco seasoning instead of the chili powder, and, as suggested, added about a 1/2 cup of sour cream. I also don't know what those beans are that the OP was referring to, so I used a can of refried beans. Thought that would work better with kids, too. Will make this again!

Creamy Chocolate Pie

I can't believe I am saying such a thing, but this was reeeeealllllly sweet. It definitely needs the Cool-Whip type topping on top to balance out the super-sweet chocolate body. Easy, though, and my kids thought it was a great treat.

Caramelized Baked Chicken

This was great - even my four year old, who is crazy tired of chicken, wanted a third helping (!). I didn't use the full amount of honey and used a large-ish garlic clove. I used bone-in chicken breasts with the rib meat (on sale) and I also basted every twentey minutes or so. Will keep this recipe and use again! Thanks!

Christmas Wreaths

I wish I would have read the reviews before I made this, because I wasn't expecting such a gooey mess. I panicked because I thought I had made a mistake, and pressed them into a square pan (like Rice Krispie bars). So...we had green bars, which was fine. The kids loved them :o). I'll know what to expect next time!

Saltine Toffee Cookies

I didn't know what to expect from these but they were excellent! The saltines make a nice, flaky "crust." Easy, inexpensive and the kids love them! I lined a pan with foil then sprayed the foil with non-stick cooking spray as I read others had issues with sticking...and I also didn't have any dark brown sugar, so I just used light brown sugar and it was fine.

Roast Sticky Chicken-Rotisserie Style

Oh, wow! I have been under the impression that MY roast chicken was the best...then I tried this! I went exactly by the recipe, except I marinated it over-night. When I do this next time, I may add some chopped celery and some boullion granules to the chicken cavity along with a bit of water to make make more drippings for gravy. EXCELLENT!!!!!

Bacon and Cheddar Mashed Potatoes

These are soooo good! I have never used any other recipe than my mother's, so this was living la vida loca for us. Didn't have any bacon, but had bacon pieces (for salads) and "light" Miracle Whip. Awesome!

Spicy Orange Beef

I took the advice of the others who tried this before to put chunks of orange peel in the stir fry to "infuse" the essence because I thought that the 1/4 cup orange peel wouldn't go over well with my family. I also added stir fry vegetables and water chestnuts. It was excellent! Easy and great for something different. Thank you!

Garlic Chicken

I wonder if I did something wrong because I thought this was just "okay." As suggested by a previous review, I served with w/ spaghetti noodles and marinara as "chicken parmesan." I had the leftovers for lunch today and it was almost better the second day. I'm going to keep this recipe and try again...UPDATE ONE MONTH LATER...The more I make this the more I like it. My husband is regularily requesting this for dinner. Four stars.

Brown Sugar Meatloaf

I have used this recipe several times and I would suggest that if you make this, to use 93% or above lean ground beef. The first time I made this, it turned out runny and messy because I didn't use a lean enough beef. Now that I have figured it out it has been perfect! The flavor is excellent and my family loves it.

Amber's Sesame Chicken

I have never used Chinese Five Spice in anything before so this was a very different taste for us. I also used the "Fish and Things" teriyaki marinade, scaled the recipe back to 12 servings. I used the full 12 servings in the chicken and mixed a little more flour w/ water to thicken the sauce up... and it was pretty saucy. I agree that it tastes like something from a restaurant. I will definitely make it again!

Fish and Things Teriyaki Marinade

I have always doubled the marinade recipe for "Baked Teriyaki Chicken" by Marian Collins on this site when I need teriyaki sauce (that sauce has cider vinegar and has more of a bite). "Fish and Things" was a sweeter sauce and was different for us, but still was very good. I scaled this recipe back to 12 servings and used just a little less honey than was called for. One thing I wasn't prepared for was how fast it foams up when you add the honey...I wasn't ready for it and it spilled all over my stove. I will definitely make sure that doesn't happen next time :o).

Peanut Butter Pie I

I have been making a pie like this for about ten years...almost identical to this recipe. It is very, very rich but it is one of the best pies that I have tasted. Tastes even better after a day or two in the fridge. I am not a peanut butter fiend...I imagine that my rating would be off the chart if I was. Sinful!

Spicy Bean Salsa

This was EXCELLENT! I was literally the salsa by the spoonfuls...it was so good. I think I will drain the tomatoes next time (which I didn't do this time)to make it a little less watery. Also, I may use a fresh jalapeno pepper. Cilantro would have been perfect in this but I didn't have any on hand. I will definitely make it again and will share this recipe with family and friends! Thanks!
