The Hudsucker Pasta

As many before mentioned, I had a difficult time finding Bombolina, so I picked up Bertolli Garlic, Herb and Onion. I left out the garlic clove, completely forgot the red wine ~ was drinking it instead ~ and didn't use the pine nuts (my family is really picky). I used frozen, cooked shrimp, for ease. Turned out really great. Will definitely use this recipe again.

Baked Scalloped Potatoes

Because I had a large-ish casserole full of potatoes, I used two cans of cream soups: cream of celery and cream of mushroom. I also added half of a Velveeta brick because I was aiming for the "cheese" potatoes and cut up several breakfast ham steaks. ThEN, I added the milk, too. I think that is where I went wrong. It was WAAAAAY soupy. After an hour and uber soupy-ness mess, I ended up ladelling out much of the extra liquid, which ACTUALLY ended up being FABULOUS cheese soup. My potatoes weren't getting done, either, so I put the whole dish in the microwave and nuked it for about ten minutes, then put it back in the oven on low broil to brown the top. It took a lot longer than expected, but the flavor was phenomenal. And now I know how to make cheese soup. :) Fabulous. I know what changes to make next time, too.

Chicken Noodle Casserole I

I used reduced sodium soups (as I try to always do). Added a few more crackers on top, and a dash of garlic powder, omitted salt. Super easy. Wow.

Chicken Florentine Casserole

I: 1.) Sauteed fresh spinach and mushrooms in butter and a couple cloves of garlic before I put them on the bottom of the baking pan. 2.) Added a layer of cooked, thin egg noodles b/w the vegetables and the chicken 3.) Used lower sodium cream of mushroom soup and whole milk, instead of half and half. I also added some oregano and black pepper to the sauce. I thought it was excellent; my family is picky, though, and it wasn't their favorite. I thought I could sneak mushrooms and spinach into the casserole. Alas, they noticed. I would definitely recommend this to others, however.

Cheesy Ramen Noodles

I had nothing in my house to make as a side dish to chicken but I had plenty of noodles (ramen included!). I looked up "noodles" in Allrecipes and stumbled upon this recipe. It was really very good! I had some Velveeta that I didn't know what to do w/ in my fridge so I used that. It tasted like those packaged noodle mixes from Lipton but was WAY easier!!

Royal Icing I

This recipe was super easy. I used almond extract instead of the alcohol and used the frosting to decorate individual brownie bites with a ganache frosting I made (also from this site). I'll definitely use this again!

Chocolate Ganache

I only had a 4 oz. bar of bittersweet chocolate but I had a 1/3 bag of mini semi-sweet chocolate chips and used those and it turned out fine. It didn't dry like I would have liked and still is a little moist about 8 hours later. I used this ganache on individual brownie bites and decorated them w/ white stripes on top with a royal icing recipe. The taste is phenomenal ~ kind of like mini Hostess cupcakes and they look like they came from a bakery. I will use this recipe again because it was so tasty and easier than any frosting recipe I have ever made.

Chicken Tortilla Soup V

I didn't know what to expect from this because I have never had this kind of soup before. I was almost regretting making it when I was putting it all together, but it turned out SO well. I added another chicken breast, black beans and more spice than was called for. I also wasn't sure about adding the tortilla chips but they, as long as the cheese and sour cream I put on top, really added to the flavor. Yummy!

Unbelievable Rolls

I'm so thrilled because this is the first roll recipe that I used that has ever worked for me! My last attempts have been terrible. These were easy and are very tasty ~ they remind me of my mother's rolls.

Egg and Sausage Casserole

I used this recipe on Thanksgiving when I couldn't find my usual egg and sausage bake casserole. As others suggested, I added a small amount of milk and increased my eggs to a dozen. I also added some dry mustard (one ingredient that I could remember from my recipe), dried parsley and garlic powder. I didn't particularly care for the crescent roll crust, but everyone thought it delicious...so I am in the minority.

Broccoli Salad II

My all-time favorite broccoli salad! I chop 1/4 of a small red onion and add that, too. Light Miracle Whip works well instead of regular mayo and I use either apple cider or white vinegar ~ whatever I have on hand :-).

Easy Apple Crisp

Very good! I made a few changes, though: I used apple pie filling instead of apples to make it easier, cut the sugar down to 1/2 cup (thought the filling would be pretty sweet), added about 3/4 cup of rolled oats and poured 3/4 cup of margarine over the top. The top ended up chewy and crispy. I made it for a dinner party and was asked for the recipe a number of times!

Chicken Pot Pie IV

I added some onion, a couple of stalks of celery and one carrot. Before I put the top crust on I sprinkled celery salt (instead of regular salt), pepper and basil. I thought this was awesome, but my family grumbled about it. It was easy enough, however, and is a great recipe.

Best Marinara Sauce Yet

Surprisingly easy to make! Prepared this for guests along w/ meatballs and chicken parmesan and it went over very well! I followed the recipe very closely, except I added a bit more garlic. Thanks for the recipe! :o)

Christmas Casserole Cookies II

I will admit that I am a follower when I am trying new recipes. This is the first time I have tried one that had no ratings, but these turned out great. I was a little suspect about them and how they would turn out. They weren't as hard to roll as I thought and they really stuck together as they cooled. I have no idea how the orginal recipe yielded five dozen...I got maybe two dozen; I'm sure I made them too big! They smelled heavenly in the oven and my four year old loved them. Thanks!

Boudreaux's Zydeco Stomp Gumbo

Like some of the others who posted reviews, I have never made gumbo. I am thinking that this recipe is very forgiving because I am not certain that I used the correct amount of chicken broth and I didn't have the right amount of cajun seasoning so I used some Old Bay. I also added some crabmeat and oysters and extra tomatoes (diced, from a can) and it was soooo wonderful. Delicious. Perfection. This goes in the permanent file!

Best Ever Chicken Casserole

I did several things differently, 1.) I boiled the chicken with onions, celery and a boullion cube for extra flavor, 2.) I put a layer of egg noodles on the bottom of a pan before I put the chicken mixture on top of it, and 3.) I put some Swiss cheese slices on top of the chicken mixture before I sprinkled the remaining corn flakes on top. It turned out so excellent; my whole family loved it.

Cherry Crisp

My son has been bugging me to make a cherry crisp and so I picked this one because it looked easy and I had most of the ingredients on hand. It turned out really, really well. Delicious! I might melt some more margarine for the top next time and I didn't use quite as much nutmeg as suggested. I'm anxious to try this with other types of fruit.
