Chicken Parmesan Bundles

These were a little messy to put together, but SO worth the effort. I had to make a few emergency substitutions based on what I had on hand. I mixed the cream cheese & spinach with about a tablespoon of Mrs. Dash garlic & herb seasoning blend for the filling and rolled the bundles in 1 1/2 cups of crushed cornflakes & 2 tablespoons of melted butter. Unfortunately, I forgot the part about dipping the bundles in egg so the topping didn't stick to the chicken very well. After baking them, we topped them with warmed alfredo sauce instead of a tomato based sauce and they were a big hit with the entire family. Definitely a do-over!

Red Lentil Curry

We've been looking for ways to incorporate more beans & legumes into our menu and this recipe was a hit with the whole family! I followed the recipe almost exactly, only substituting ground ginger for minced, fresh ginger. I still think it was fabulous. We served it over couscous with a little sour cream on top. Delicious...and really easy to make, too!

Addictive Sweet Potato Burritos

These are a really great vegetarian main dish! I used 1 can of black beans & 1 can of dark red kidney beans because that's what I had on hand but other than that, I followed the recipe exactly. I will definitely make them again although next time I might omit the mustard and tweak the spices a little to turn up the heat. The creamy sweet potatoes really compliment the combination of spices already so I'm not sure how much tweaking would be needed. I would also like to try using lentils in place of the beans. So many possibilities!

Angela's Awesome Enchiladas

Our family LOVES this dish. We almost never have leftovers so I don't know how they would be as the next day's lunch although I'm guessing that, once cooked, they would freeze and reheat really well! The first time I made it, I followed the recipe exactly and it was, as the name implies...Awesome! On days that I know I'll be working late, I just put the raw chicken, onion, chiles, taco seasoning, water and a few green onions into the crock pot in the morning and let it cook all day. Then when I get home, I shred the chicken, add the rest of the spices, prepare the soup mixture and mix it all together & make enchiladas. It makes for a really quick and delicious dinner!

Irish Chicken and Dumplings

This is, hands down, my favorite chicken and dumpling recipe. Ever. I do agree with those who say the dumpling recipe can be cut in half. (I used the remaining half of my batter for pancakes the next morning) I also omitted the potatoes, mainly because I didn't have any at the time but I think the dumplings provide the perfect amount of "starch" for the dish without the added potato. Other than that, I followed the recipe to a T and it was fabulous. We are making it again tonight and I don't expect to have any leftovers!
