Quick Quiche

Reviewed: Sep. 3, 2012
Great! I used complete pancake mix in place of the flour, as another reviewer suggested, which was wonderful. I also heated it an additional 5 min since I used a glass pie dish. My husband thought it was the best quiche he'd ever had. It was good right after I made it, but it was even better the next day reheated. Will be making many, many more times!

Cordon Bleu Chicken Rolls

Reviewed: Sep. 25, 2011
This was great! Didn't make the sauce, used pepper jack cheese instead of swiss, and used breadcrumbs instead of corn flakes. Fiance really enjoyed it. Will definitely make again!

Actually Delicious Turkey Burgers

Reviewed: Feb. 1, 2011
These are a delicious alternative to beef burgers! I make them all the time. I use 1 whole egg, I've tried both dried parsley and fresh, I add red or green diced bell pepper, & canned chilies. I've served it a bunch of different ways: plain with provolone cheese and mayonnaise, with sauteed garlic mushrooms, on an onion bagel, etc. and it's delicious either way!

Apple Crisp I

Reviewed: Feb. 1, 2011
This was great! I didn't have any walnuts or instant oatmeal, so I used normal quaker oats. I served with vanilla ice cream and the boyfriend and I thought it was very tasty!

This is a great, simple side dish! I make this all the time. I am a HUGE fried okra fan, and this curbs my craving in a healthier way!

Fruity Curry Chicken Salad

Reviewed: Feb. 1, 2011
This is the most delicious chicken salad! I've made it countless times. Sometimes I use canned cooked chicken, sometimes leftover rotisserie chicken, or I'll cook a couple of breasts and chop them up. All versions are excellent. I don't always use celery, I'll use whatever apples are on sale, I don't usually use pecans but I have and it's good, I've used all types of onions, red grapes, and I always use extra curry. Everyone who I've served this to loves it. It's good on bread, croissant, with crackers, and over lettuce. I can't rave enough about this recipe- one of my favorites on the site!

Easy Arugula Salad

Reviewed: Feb. 1, 2011
This is so good! The first time I made it as written with olive oil. It was delicious! Now, I make a simpler version almost daily to bring to work for lunch: arugula, dried cranberries or golden raisins, and all-natural boar's head tuscan turkey from the deli. I mix olive oil & rice vinegar, and when it's time to eat, pour over the salad and shake. It's so good, filling, and easy!

Baked Pork Spring Rolls

Reviewed: Feb. 1, 2011
These are excellent! I like to serve it with duck sauce or a chile sauce and as a side with egg drop soup. I don't consider myself a slow mover but I think 25 minutes is an underestimate of the prep time. After cooking the pork, chopping the veggies, mixing ingredients, stuffing rolls, etc. it took at least 35-40 min, but it's worth it!

Balsamic Chicken with White Beans and Spinach

This was pretty good and was definitely simple to make. It's not the best dinner I've ever had but it's good for a weeknight meal.

Southwest Chicken Pie

Reviewed: Feb. 1, 2011
This was really delicious and so easy! I left out the olives and sauteed the chicken in fajita seasoning first. I didn't pre-bake the pie crust- it wasn't necessary. I've made it twice now, and the first time I didn't have sour cream so I used cream cheese. I think both ways turned out excellent.

Spicy Shrimp and Red Bean Soup

Reviewed: Feb. 1, 2011
I had searched for a recipe with shrimp and fresh dill and thought this sounded easy and tasty. While it was definitely easy to make, I actually was disappointed in this recipe. The only thing I did differently was that I didn't have celery and I used tomatoes with green peppers and onions and added a can of green chiles. I took the suggestion of serving this over rice. I thought it was bland. I tried adding tobasco sauce, which helped a little, but this just didn't have enough flavor for me. I probably won't make this again.

Spinach Stuffed Chicken Breasts

Reviewed: Jan. 20, 2008
this was awesome- i used 2 breasts instead of 4, but made the same amount of stuffing.... it was plenty for 2 people. i just kinda put the leftover stuffing in the dish around the chicken. i also used 2 pieces of bacon for each breast instead of 1 for more flavor. i recommend broiling for the last 2-3 minutes so the bacon will get a little crispy. i shared this recipe with several friends who've all raved about it! very tasty!!
