Chicken Stuffed Peppers with Enchilada Sauce

These were so delicious. Served to the adults at my sons 11th b-day party. We had left over stuffing (peppers in ID must be little) so I used the stuffing the next day to make chicken enchiladas with flour tortillas. They were the best. Am definitely making again-both ways. YUMMMMMMY!!

Janet's Rich Banana Bread

This is the best banana bread ever. My family devours it!! I took it to work and everyone wanted the recipe. Now, this is the recipe they all use. I only made a few minor changes, by creaming the butter with the sugar, instead of melting it. I mashed the bananas to incorporate them more into my bread. Thanks for the great recipe!!

Pecan Cream Cheese Squares

Loved this!!! I did, however, modifiy the cream cheese mixture. I melted 1/2 bag of butterscotch chips in the microwave and added it to the cream cheese mixture at the end. It was delicious. Next time I am going to add caramel ice cream topping or melted caramels instead. I thought I might mix in melted chocolate chips by swirling them in the mixture after pouring it into pan. Also, I did use 2 pkgs of cream cheese, giving it more of a topping than if you only used one. The best!! Shared it at work and got raves!! Will make over and over. YUMMY!!!!

Banana Sour Cream Bread

I didn't read any of the reviews before making this recipe. Big mistake on my part. I baked as it said and my loaves were runny in the middle-totally raw. I thought that the 300 degree oven seemed too low. I even returned them to the oven and tried to cook them longer, but it was like they were never going to get done. I was afraid that the outsides and the bottom would burn. I was really dissappointed. I will try to make it again, only because I think with all the changes that are suggested in some of the reviews that it will be really good.

Southwestern Haystacks

My family really enjoyed this meal. I did a bit different, though. I cooked the ground beef with a teaspoon of minced garlic and about a 1/3 of cup of onions. I, also, added the chili powder and cumin as suggested by others. I went a little further and added a can of chopped green chilies and replaced the tomatoes with 24 oz. of salsa. I used rotini, bacause I didn't have and macaroni noodles. After it was done I topped it with crushed tortilla chips, cheese, sour cream, olives, and taco sauce. Then I added chopped cilantro as a final garnish. It was delicious and dissappeared quickly. Thanks for the great recipe. We will make this one a lot.
