Honey Nut Granola

No one seems to make this recipe as is because it's so basic. Adding coconut changes the recipe completely since it's so sweet. I found the baking time to be highly dependant on the cookie sheet you use, this recipe seems to assume a thin cookie sheet. I had one batch on a dark thin sheet, and another on a thicker aluminum sheet, and the granola was close to burning on the first sheet while still raw on the second.

Fresh Pasta

Not worth making without a pasta machine, but well worth it otherwise. Egg size makes a big difference, so be ready to adjust. Italians use this pasta recipe, but Italian eggs have less egg white than american eggs, I usually use 4 c flour, 4 yolks, 3 whites. Make sure to put plenty of salt in the pasta water when you cook this, otherwise it will be bland. Makes great lasagna, fettucini, ravioli.

Ruth's Grandma's Pie Crust

Best pie crust EVER! Very flavorful, wonderful texture, and flakier than any other crust I've tried, but also holds together well. I'll never make another crust.

Blue Cheese Ball

Excellent combination of flavors and ingredients, but there's too much blue cheese in the recipe, it overpowers the other flavors, cut back and enjoy.

Chocolate Scotcheroos

My aunt makes these with the sole difference that she puts the butterscotch/chocolate in the middle. I tried them with the choc on top this time, but my aunt's strategy is better, as it keeps your hands cleaner and gives it a softer consistency due to the soft chocolate in the middle.

Microwave Caramel Popcorn

Bodacious Broccoli Salad

The cheese and bacon give this great texture and flavor. The vinegar flavor is a touch too strong for my taste, but it's not like other recipes that are swimming in it.

Zucchini Bread II

Look no further, this is the perfect zucchini bread, simple, cinnamony but not overwhelming with too many spices. Very moist, the raisins add a great dimension to the bread. I didn't have nuts, but it was a 5-star even without them.

The shell recipe is excellent, though I found I had to add a bit of extra water to make them roll out. I rolled them using the finest (#1) setting on my pasta machine and I got way more cannoli shells than the recipe indicated, about 40 shells.

This is a very forgiving recipe, you can substitute in other cheeses if you don't have the mozz & parmesan on hand, quantities don't need to be exact. Have used it several times and will use it many more. Thank you thank you thank you!

Mom's Zucchini Bread

This is really just a spice bread with some zucchini tossed in. It's good if you like spice bread, but there are yummier things to do with zucchini, like the zucchini brownies and the zucchini patties on this site. "Zucchini Bread II" is an excellent alternative that emphasizes zucchini, cinnamon, and raisin flavors.

Zucchini Brownies

Really, really good. I thought it would just be a way to consume zucchini, but the zucchini actually add a very nice, subtle flavor to the brownies. This recipe is worth making even if your garden isn't overflowing with zucchini and you have to go to the store to get some. Don't use lowfat margarine for the frosting, like I did, it won't hold together. I'd imagine butter would have been a better substitute.

Mulberry Pie

Best fruit pie I've ever had, it's not just the mulberries that make it good, the flour-sugar mixture gives the pie a great texture, this is not your typical cloying, gelatinous pie filling.

Indian Chapati Bread

This recipe was good, but it's easy to wind up with chapati that are hard and dry. To get chapati that are soft and flexible it is crucial that the skillet is very hot, as per the instructions, so that they are done in under 30 seconds per side. Don't be too stingy with the water or cut back on the oil. If your chapati are still too dry, try rolling them out thicker.
