Apple Dumpling Cake

Tried this because of the good reviews. OK on the first day but a little boring - needs something, maybe powdered sugar on top or nuts. I don't like to give anything but positive compliments and encouragement but felt I had to warn others. As I said, okay the first day but quickly deteriorates after that.

Strawberries

Who gave out our family's wedding/shower cookie recipe? This is a big favorite of mine. There are other versions but this is the one I know. A little labor intensive but worth it. Add these to a tray of mixed cookies for a beautiful garnish. You can break a wooden toothpick in half and dye it with green food coloring for a stem. Notice there is no picture...they go quickly.

Summer Corn Salad

My mom gave me a bag of corn on the cob and tomatoes from the garden and I didn't want to waste this good stuff so I looked for a recipe, found this and it was very good! I used fresh basil and Good Seasons Italian dressing made in the carafe with red wine vinegar.

Blackberry Cobbler II

The dough part of this recipe is delicious (I'm glad I doubled it!)The blackberry part was perfect (not too sweet- probably because my berries were very tart)If you doubled the dough I would recommend that you bake it slightly longer.

Pesto Chicken Florentine

The recipe doesn't mention tomatoes but the picture shows chopped tomatoes topping this dish. Do it, Do it, Do it! The tomatoes took this from a 7 to a 10 (10 being fabulous). I love spinach and so I will double it next time. Also, I used large shrimp instead of chicken - great!

Sour Cream Chicken Paprika

This is one of the favorite recipes from my childhood. I couldn't believe some of the reviews saying it was bland so I took a closer look at the ingredients. First I checked the paprika and 2 T. is quite enough! Then I noticed it called for boneless, skinless chicken breasts. No wonder! Do this: use chicken breasts on the bone and legs (or your favorite pieces) and remove the skin. Wella! the bones will add flavor! Salt and pepper to taste. AND: don't use that much sour cream (this too might have diluted the flavor), I use 3-4 big dollops, which is all you need. YUM!

Cheesy Ranch New Red Potatoes

I used Hidden Valley Original Ranch Dressing Light. (Bought the Light by mistake) They were terrible! I made them like a casserole and it was way too much dressing. The Hidden Valley taste was overwhelming, the word "Original" threw me off and I didn't notice the word "Light" - very bad taste!

Rhubarb Cobbler

This is so good you really should double it, especially if you use a 13X9 pan. I am going to make this from now on instead of rhubarb pie so I don't have to deal with soggy crusts. The cinnamon is a great touch!
