White Beans and Tuna Salad

This was really delicious. I did make a few changes: substituted parsley for cilantro (personal preference), and minced jalapeno for the pickle relish (based on what I had on hand). Used less mayo and mustard and will cut back further next time. Did not blend. Mixed well and served with crackers as an appetizer. Wonderful. Company cleaned it up quickly!

Roasted Swiss Chard with Feta

This was my first time eating swiss chard and this recipe is delicious. I followed some other reviewer's advice and added garlic and substituted goat cheese for the feta. Wonderful. Even my husband went back for seconds!

Pretzel Turtles

These were mouthwateringly good. My husband devoured them in a minute. I used the little waffle style pretzels and Hershey's Bliss dark chocolate caramel. So easy and so good. I'm taking them to two different parties this weekend.

Meatball Orzo Soup

This was really, really tasty. Like others, I added more broth and instead of zucchini, I added shredded carrots and sliced green onions and fresh parsley. If you use low sodium broth, you will probably want to add some salt and pepper. We will definitely have this again.

Sausage Pasta

I'm rating this a 5, but I have to admit I changed it dramatically. First of all, I used brown rice instead of pasta. I used 12 oz. organic sausage, and added a can of diced green chilis, mushrooms, 3 tomatoes, a larger quanity of a fresh mixture of olives, and quite a bit of garlic. I cut the cheese way back to less than a cup. The end result was delicious.

Wendy's Quick Pasta and Lentils

This was delicious. My husband definitely wants me to make again. As some readers suggested, I added a little balsamic vinegar, used a 29 oz. can of diced tomatoes with spices, and added a handful of pine nuts. I used medium shells and only used 8 oz. That was plenty. Very good, vegetarian recipe.
