Pipirrana (Spanish Potato Salad)

Definitely fun to try a new recipe. Should have read the footnote: dont add the tomatoes until right before serving so it doesn't end up mealy. Good to know, especially if chilling overnight, etc.

Amazing Slow Cooker Orange Chicken

I didnt even brown the chicken. I tossed the dry ingredients into the crock pot. Sliced the chicken into strips and tossed it in the dry stuff to kinda coat it. Then I put the rest in the crock and cooked it on low for about 3 hrs. Turned out great. I would be interested to try it w/ browning the chicken first w/ a better coating. Its just too easy not to go for 4 stars, although the taste isn't bursting with excitement. it tastes like chicken with an orange marinade.

Slow Cooker Enchiladas

I added olives to the layers n sprinkled cilantro on top. Kept the meat on Med heat after it was browned b/x i didn't want it runny. Yummy! try adding lime juice, avocados next time From another note: After reading many of the reviews on this recipe, I modified the dish as follows: slow-cooked a 1&1/2 lb roast and diced yellow onion all day in two cans of soup, taco seasoning and 1/2 C water. Removed meat and shredded it, poured the seasoned soup mix into a bowl and stirred in the salsa, cheese, 1/2 C sour cream, and fresh cilantro. Stirred meat back into this mixture and started the layers. I sprinkled sliced olives on top of every layer. Cooked on high until the top layer of cheese looked melted (about 75 minutes). I kept my tortillas in the fridge all day, and that may have kept them from crumbling into mush while they cooked. All my husband and I could say while eating this was "oh my god this is good!", and we had to force ourselves NOT to eat the whole thing in one night. Reheated portions the next day (microwave for lunch, and oven for dinner), and it was even tastier! [ETA]: I have made this several times for potlucks at work, using the ground beef and doubling the amounts. I prep it the night before and put my 6 quart crock in the fridge, then heat it the next day at work. If you sprinkle cheese on top of every salsa/soup layer, and use a DOUBLE-thick layer of corn tortilla wedges, the tortillas do not get very mushy, even after sitting in the fridge overnight.

Big Soft Ginger Cookies

I liked this recipe a lot. I want to try it again an add a tsp of cinnamon to the mix and maybe try replacing 1/2 of the butter w/ apple sauce. I also didn't make them quite as big as the recipe calls for apparently, since I yielded 3 dozen cookies from the batch.

Cookie Sticks

Disgusting. I've tried a few cookie recipes when I was in a pinch and didn't have any butter....bad idea! They never have a good flavor. Also, the walnuts and chocolae chips dont really stick. I had to press them into the cookie to have any chance of sticking. I did salvage the 2nd pan. I sprinkled Saigon Cinnamon on them when they came out. The cinnamon gave it more flavor....cause the cookie doesn't have much of anything. I followed the recipe to a T, I'm just not happy w/ cookies that have no flavor

Honey Wheat Bread IV

This bread was way too easy!! It turned out great. I cooked it for 2 hrs in the slow cooker and didn't use any special pan. It was a bit overdone on the edges. when I do it again, I will cook it for less than 2 hrs. It looked kind of like an artisan loaf in the oval shape of the crock pot.

Make Ahead Lunch Wraps

These are awesome! Lunch for a week or two. I freeze em and pull em out when needed. I'd be interested to add something more to the filling though. Its good, but I think there's something that could make it great....I just can't put my finger on it. I did enjoy them more when i ate them w/ some salsa and sour cream/plain yogurt.

Cheesy Beans and Rice

pretty tasty dish for having no meat in it. I added 1 tsp of cumin to the onions and only used 1/2 onion instead of the full onion the recipe called for. I really like this dish. I will have to try it again with different beans. I think black beans would be yummy.

Argentine Lentil Stew

Super delicious! I've been looking for a good lentil recipe. I saved this one a couple years ago. Its a shame that I didn't try it until now!!! I didn't have 3 fresh tomatoes, so I tossed in some canned diced tomatoes I had sitting around...probably didn't add quite enough (12 ounces) to compensate for 3 tomatoes. Also I liked the suggestion to throw the carrots in with the lentils. The recipe didn't clarify whether to cook it uncovered or with the lid on. I chose to cook it uncovered for the first 20 mins. If I do it again, I will put the lid on the entire time, I think too much heat escaped. Also, I loved the suggestion to add some more spices, so I put 1/4 tsp of crushed red pepper, cumin, oregono, basil, 1 bay leaf, and a few rosemary springs. This turned out very savory!! It truly is way too easy for how delicious it is!! Having lived in Argentina for a while, I wonder about adding some spiced sausage (Argentine chorizo-not the Mexican kind) to the recipe and maybe some chunks of beef. The Argentine lentil soups/stews I had while I was there are some of the tastiest I've ever had. I wish there were more Argentine recipes on allrecipes.

Caramelized Pork Slices

This recipe is wonderful because of the ease! It is quick and has a pretty easy to fix. However, I wonder if there isn't something that could be added to give it a little pizaz. It wasn't bad, but i think that it could be improved to get beyond the blander side of things and create an impressive dish.

It was a bit salty. We didnt have onion salt so I used regular salt, but I reduced the salt to 3 tsp instead of the 4 it calls for. Still, I think it was a bit too salty.

Orange Banana Nut Bread

I like how easy this was to make. I dont like how sweet it was. I cut out all the white flour and used 2.5 cups of whole wheat flour. I also added a little bit of extra orange juice and some orange zest. I'm glad I did. Next time I think I'll cut out some of the sugar or try using honey as a sweetner.
