Tuna Noodle Casserole from Scratch

Reviewed: Mar. 8, 2014
This was a great recipe. Everyone loved it. It was easy to prepare, a quick dish and deliciously creamy. I gave it 4 stars, because first of all, I didn't really taste the onions, celery and garlic. Next time, I think I'll omit that. Also, I doubled every ingredient except for the tuna. 8 oz. of noodles doesn't make alot.

Easy OREO Truffles

Reviewed: Apr. 26, 2013
I love love love these truffles, but the only reason I'm giving it 4 stars is because they're too greasy if making as directed above. I use a whole package of oreos plus another 15 or so. The truffles hold together better plus you get more truffles. And they are TOO DIE FOR!! Oh, we like the regular oreos, but we LOVE the mint oreos dipped in white chocolate!! (I use the Wilton White Candy Melts. They melt really easy in the microwave and don't need any oil or anything added to them and the flavor is really rich.) They have just a hint of mint. SO GOOD!!

Mom's Famous Raw Vegetable Dip

Reviewed: Mar. 30, 2013
This dip is very good, but I found it to be too salty. I added more sour cream and mayo to make up for it. (Btw, used reduced fat sour cream and Kraft mayo with olive oil to cut down on the fat and calories.) I also doubled the amount of dill and parsley. Next time, I will cut the seasoned salt to 1 teaspoon. Very good recipe!!

Teriyaki Sauce and Marinade

Reviewed: Feb. 7, 2013
This is a great sauce. I ended up using marsala wine since I didn't have any mirin on hand. The only other change I made was to add some corn starch to it to thicken it, because I like sauces to be thick. My son couldn't get enough and he is super picky.

Chef John's Macaroni and Cheese

Reviewed: Jul. 30, 2012
This was a good mac 'n cheese recipe, however, it didn't have much of a cheesy taste and was rather dry. It was just ok. And the kids didn't care for it at all.

Easy Batter Fruit Cobbler

Reviewed: Jan. 27, 2012
Oh, my gosh!! So easy and so delicious. Best cobbler I've ever made. I did something different, though. I had some leftover triple berry pie filling (about a cup or so) left from a cheesecake I made last week and I didn't want to just throw it out, so I used that in place of fresh fruit and used 3 ramekins instead of a pan. I still used the whole batter - I didn't half it or anything, although, after reading that this is a cakey cobbler, I only used half of the baking powder so that it wouldn't rise as much. It turned out perfect. The consistency of the batter after cooked was perfect - nice and soft on the inside and a little crunchy on the top. And there was a perfect balance of batter and fruit. Everyone loved having their own little dessert, too. Thanks for sharing this amazing recipe!!

Awesome Red Pepper Hummus Dip

Reviewed: Jan. 20, 2012
This is a great recipe, however, I did tweek it a little. I added an extra can of garbanzo beans, because the dip was thinner than what I'm used to. To compensate, I added another teaspoon tahini paste, 1/4 teaspoon salt and about 1/4 cup more red peppers. The next time, I will cut the lemon juice in half and use either one large or 2 small cloves of garlic. The texture was nice and thick - perfect for dipping. I, like many others, had trouble finding the tahini paste. Look in the asian food aisle. I found it near thai sauces.

Judy's Strawberry Pretzel Salad

Reviewed: Apr. 8, 2011
I'm debating on whether this is worth attempting again. Being a cheesecake lover, I think I expected more flavor from the filling. Also, I baked the crust for 10 minutes and it was hard to cut through. The topping I loved, but I felt like it needed more jello and strawberries and the strawberries need to be sliced!! Mine kept sliding off. This may be a keeper for a potluck, though.

Easy Meatloaf

Reviewed: Mar. 7, 2011
This meatloaf is the best I've found so far. It didn't fall apart when cutting it, moist and the sauce was sweet and tangy. I took some of the other reviewers' advice and added worcestershire sauce to the meat mixture, made extra sauce and only used about 1/3 of the suggested mustard. The kids who NEVER eat meatloaf really liked it.

Peanut Butter Pie X

Reviewed: Oct. 10, 2010
This did not turn out like I expected. It wasn't as rich and decadent as I thought it would be and it didn't set very well. I let it chill for 5 hours before cutting into it and it just started to sink in. I actually think it needed less whipped cream. That not only took away from the richness, but also the firmness. The taste was ok, but not what you expect out of peanut butter pie.

Apple Dumplings II

Reviewed: Oct. 7, 2010
I've tried SEVERAL apple dumpling recipes and this is the keeper. So delicious and so easy!! I had some store-bought refrigerated pie crusts on hand, so I used those instead of making my own crust, but next time I do want to try this crust recipe. It looks so easy. These dumplings are loaded with flavor. Coating the apples with the dry cinnamon mixture is key. It sticks to the apple. (Other recipes have you pour a syrup on the apple, which basically runs down and sits at the bottom.) I did made the mistake of only using half of the syrup to pour over the dumplings, thinking that it would make the crust soggy, but the syrup actually carmelized during baking, so I used that to drizzle over the ice cream that I topped the dumpling with. Soooo good. Next time I'll utilize all the syrup to have more for drizzling.

Poke Cake III

Reviewed: Jun. 1, 2010
Love it!! This cake is so light and delicious!! And the cherry pie filling is the wow factor. I think next time I might even use 2 cans of cherry pie filling. This stands above any other poke cake I've ever made. I only made one variation as tried by another reviewer. I used the handle of a wooden spoon to poke the holes. It made a huge difference. Way more of the gelatin actually gets into the cake instead of running over and along the sides and just intensifies the flavor. Very easy to make and was a big hit at the Memorial Day cookout. I will be making this for years to come.

Bacon Cheddar Deviled Eggs

Reviewed: May 31, 2010
Best deviled eggs I've ever had. They're especially great for those people that don't like relish, pickles or paprika. Followed the recipe to a tee and they were absolutely delicious! I've never been able to make deviled eggs that could even compare to my mother-in--law's (according to my husband) - until now!!!! He absolutely loves these. Thank-you, Emily, for this fantastic recipe.

Banana Cream Pie Made Easy

Reviewed: Apr. 23, 2010
Great recipe, but for my liking it was too rich, even though I love rich desserts. Too make it creamier, I tried adding more heavy cream, but it seemed to make it thicker, so I added milk (about 1/3 - 1/2 cup).Perfect!! Great banana flavor and texture. I've made banana cream pies in the past that just don't set. I also added about 4-5 Tbsp. powdered sugar to the 1 cup of heavy cream for a little sweetness. Oh, and I couldn't make a decent crust to save my life, but I tried the "No Roll Pie Crust", which I found on this site. The very first time I made it, it was great. It's easy to make and very flaky. I also pricked the bottom of the shell before baking it. Perfect!!!!!!!!!

Candied Sweet Potatoes

Reviewed: Nov. 27, 2009
Oh my gosh!!! Tastes just like pumpkin pie...with a few moderations. I had run out of cinnamon, so I used about 1/2 tsp. pumpkin pie spice to replace the cinnamon and nutmeg. I also took the advice of the other readers and reduced the butter by half and only used 1 cup of brown sugar. The marshmallow sauce mixed in with the sweet potatoes is what really puts this recipe in a league of its own. Amazing!! The kids, who NEVER eat sweet potato casserole, couldn't get enough. My father-in-law, who is somewhat a food connossoire said it was the best he ever had.
