Jam Filled Butter Cookies

What a grand little cookie! This recipe is a keeper. I followed the recipe exactly except I rolled the dough in granulated sugar (because that's how I love butter cookies). I made these for Valentines and instead of a thumbprint, I used my pinkie to make a heart shape in the center. I filled the center to just below the brim with jam and had no bubbling over issues. Side note: I did try the powdered sugar sprinkle and it did not melt into the cookie so since it wasn't pretty darn if I didn't have to eat it ;) I made 2 batches, one with 1/4 Tsp vanilla, one without. With vanilla it is sweeter like a sugar cookie, without the vanilla it has a more authentic butter cookie taste.

Pesto Chicken Penne Casserole

This recipe is simple to make and absolutely delicious!I have made it several times and have taken it to an Italian dinner potluck, served it to guests, and just served as a regular family dinner. Every single time I am asked for the recipe and get raves about it. It makes a very large amount so I have been putting it in a 11x14 glass baking pan to bake. I have been doubling the crumb topping and sometimes add sliced artichoke hearts and sun dried tomatoes. I don't think I have been adding 4 cups of cheese to it however, just a few handfuls of whatever white cheese I happen have in the fridge. Definietly a keeper recipe the kids will always ask for

World's Best Scones! From Scotland to the Savoy to the U.S.

I made several dozen of these for the husband to take to his Monday work meeting so I was really banking they would be delicious - and they were! I decided to use cranberries and also added some orange zest to the dry ingredients before adding the sour cream and milk. I made an orange icing that I drizzeled over the top 'Starbuck's' style. Rave reviews from everyone at his work as well. I also made a batch with cinnamon and raison, since that is the husband's favorite, and it turned out very well. This is a keeper recipe and I plan on making blueberry lemon ones next.

Easy Indian Butter Chicken

W.O.W. This was better than some restaurants' I have been to. No Tandoori masala? Google it. I did and was able to grind up some spices on my own to make it. I was nervous putting in a whole teaspoon of cayanne pepper and the full 3 cups of cream - but I did anyhow and it was divine. Husband liked it so much that he had thirds. I highly recommend making this exactly as the recipe says. Next time I am going full Indian and making Naan with it because there is lots of delicious sauce to dip it in. Well worth the three pots/pans that it took to make it

Spinach and Strawberry Salad

Yum! I made this to bring to an Easter BBQ and it was perfect! I added the glazed almonds and had blue cheese on the side. No problem refrigerating the dressing. In fact since I tripled the recipe I had plenty of dressing save to use on other salads for later. The dressing is great just how the recipe states to make it : ) The sugar brings out the flavor. Just use only a small amount of dressing on the salad. I served the dressing on the side as well so the leaves wouldn't wilt.

Justin's Hoosier Daddy Chili

This chili is awesome! I followed it exactly as written but was naughty and added a few things: garlic, black beans, and ground sausage. It made so much that I froze some to use later and it was even better the second time around. From here on out, this is my official chili recipe. Easy and delicious!

Swiss Chicken Casserole II

My husband LOVED this and I have to admit, I cleaned my plate too. I used 3 chicken breasts and sliced them up in thirds before putting in a 9x9 pan. If using more meat, the sauce and stuffing would need to be doubled (if you like plenty of sauce with your chicken). This is a great easy meal to feed a hungry hub and kids on a weeknight. Don't add salt; there is plenty in the stuffing mix and soup. Surprisingly actually does take about an hour to cook the chicken through so plan ahead timewise.

Chicken Milano

WOW. This is a keeper. I always try to make recipes just as listed but I was out of a couple items. I used white wine instead of chicken broth; Sun dried tomatoes in oil, drained. After tasting the divine sauce, I was on a roll and felt like a barefoot and pregnant real italian girl. I sliced and floured the chicken before cooking it in equal parts of butter and olive oil. Yum from a different italian recipe I love. Sauce needs to be doubled - and yes, I think sliced fresh mushrooms would have been nice to add. BUT - I highly recommend making it just like it is because I know it would be great. Then have fun Italianing it up because with you can't really go wrong, no matter what extras you add.

Real Italian Calzones

This is a great recipe! I knew enough to let the yeast activate a bit. I didn't have pepperoni so I used sausage instead. Added black olives along with the mushrooms and used fresh basil instead of dried. Lots of filling so I loaded them up with about a cup of the mix. They turned out not only tasty, but very pretty too! I ended up with about 8 personal size calzones (about the size of a half of a salad plate) The crust was just right.

Best Tuna Melt (New Jersey Diner Style)

Delish! Even my fish hating husband likes it! This is a great way to jazz up tuna into something fancy for a quick and easy dinner (especially if you are only cooking for two). Any bread will do, but as a rye fan, using rye bread was the tops and most flavorful.

Crispy Orange Beef

Oh my! This is simply divine! I doubled the sauce becasue I wasn't quite sure how much meat I had. The whole family raved and raved while we ate it. Don't change a thing! I am going to do the exact same recipe this weekend but use chicken instead. I think it will be just as yummy!

Cilantro-Lime Dressing

This is a great recipie. Since I am a sissy with peppers, I didn't add quite as much jalepeno as it said. It was great over a salad that has warm sweet pork in it. (ie my attempt to mimic Cafe Rio's sweet barbacoa salad : )

Moo Shu Pork

I didn't have pork and used chicken instead. I also didn't have fresh gingerroot and used powder. I am sure it would have been better with fresh, but the powdered seemed to do just fine. This is a great recipie and the hubby loved it - he is a big fan of moo shu. The best part about chinese food is that you can throw in whatever veggies you have on hand. I used carrots, cabbage, and mushrooms. Serve with plum sauce on the side and it is simply yummy

Fresh Peach Cobbler I

This is the best peach cobbler I have ever had! I fixed it for a large family dinner party and everyone had to have seconds. I doubled the recipe and used a 10x14 glass dish. Added a bit extra cinnamon to the peaches, added 1/2 more (3x total since I doubled it) of the topping than recipe states, then sprinkled the top with a cinnamon/sugar mix prior to baking. Got to serve it warm with vanilla ice cream: YUM!
