Mimi's Smoked Salmon Chowder

Blackberry Pie III

I have made this twice in the last week with our freshly picked blackberries. My husband says it is his new favorite! I followed the recipe except for adding more berries (about 1 to 1 1/2 cups) and increasing the flour as other reviewers have suggested. The best part is it is SO EASY!

Broccoli and Ramen Noodle Salad

This is an an excellent salad. I am usually asked for the recipe when I make this. I do make some slight alterations though. Instead of peanuts and sunflower seeds I use sliced almonds (which I toast ahead of time). I use about 1/2 tsp Crazy Mixed Up salt. Instead of cider vinegar I use rice vinegar. I know the raw raman noodles sound unappealing but they are vital to the dish. It all combines to make a salad with fantastic texture and great taste.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Excellent! Unfortunately I did not have any cilantro. I am sure it would have been even better. Next time I will add tomatoes to top it off and try the chipotle with sour cream mixed in. Husband loved it. Too spicy for the kids but they enjoyed the fish nuggets.

Oven Omelet

Great way to use leftover ham from Thanksgiving dinner. To give a little pick up use shredded hash browns from Simply Potatoes which include green peppers and onions. Thanks for the easy recipe!

Roast Beef and Yorkshire Pudding

My grandmother used to make this. We love it. I usually do not use a muffin tin. I make it in the pan I cooked the roast in. That way I do not lose any of the drippings for flavor. Then we cut it like we would a pan of brownies.

Creamy Chicken and Wild Rice Soup

Excellent soup! Lots of flavor, I added sauteed onions, garlic, chopped mushrooms, carrots and celery as suggested by others. It was yummy. I might try to use milk next time instead of cream. It is pretty rich. But it is a keeper!

Mile-High Apple Pie

Excellent recipe! I MISTAKENLY added sugar (1/2cup white and 1/2 cup brown). I wish I had followed the recipe. The extra sugar was too much. That being said the flavor was good and I am sure without the additional sweet it would be perfect.

Slow Cooker Salisbury Steak

My family loved this comfort meal. My only change will be to use reduced sodium soups. It was a little too salty for our tastes and that is without adding any additional salt to the recipe. It will definitely be in my rotation though!

Broccoli Cheese Soup V

My instincts told me I would not like this due to the processed cheese but the reviews on this were good so I went with it anyway. I wish I would have listened to my gut. I even tried half and half with chedder and velveeta but still the flavor was overwhelmingly processed. Sorry. If you like the flavor of velveeta then it is a good soup if not try another recipe.

Roast Sticky Chicken-Rotisserie Style

Good recipe! It is a keeper. I think I overcooked mine a little. It went about 5 and 1/2 hours just because I did not make it home in time to pull it out. I only made one roaster. Next time will try two and will pull out earlier. I am using the left over chicken for chicken salad sandwiches tomorrow.

Shrimp and Crab Bisque

Yummy! I was looking for something to do with my leftover crab meat. We had king crab yesterday. It is too expensive to let it go to waste. So this recipe was suggested in recipe exchange portion of the website. We loved it. Made a few changes per other reviews. I used sherry, green onions and left out shrimp. It does not make much. If you are eating it as a main course for dinner I would suggest doubling for a family of four.

Cinnamon Rolls I

Start of a tradition! I made these Christmas Eve after the kids went to bed. Then Christmas morning I promptly put them in the oven as soon as everyone woke. First time using yeast and it went well. I had always been afraid to try it. Next time I will add additional cinnamon, brown sugar and butter as other reviewers suggested but I always like follow directions exactly the first time I make a recipe and then tweak it to my family's taste in subsequent preparations.
