Baked Tofu Bites

I loved it, but more importantly, my six small children AND my two teens loved it! They didn't realize it was tofu, until the entire tray was gone. I usually use the cubed tofu, and serve as appetizers with toothpicks. Couldn't be quicker, easier or tastier. Also great in casseroles and salads.

Amish Breakfast Casserole

I made this for Christmas morning, and my family absolutely loved it! It was so easy, because I had cooked the bacon/onion mixture, along with a little red pepper, the night before. I also added a little leftover Christmas eve ham. I've tried other egg bakes, and have never found one I like! This one is the best! This will be a staple for special weekend breakfasts!

Chicken Parmigiana

I love the simplicity of this recipe! My children, all eight of them, love this recipe! The changes I make are to add seasoning to my bread crumbs, when coating the chicken, and baking the chicken without sauce. I add my own homemade, organic spaghetti sauce when serving, along with freshly grated parmesan. This keeps the chicken from becoming soggy. I serve with spelt linguine.

Grilled Salmon I

I use this recipe, with a little alteration, to marinate my salmon and chicken. I use 1/4c. lemon juice, and about 1/2 tsp. of ground black pepper, instead of lemon pepper. I also use fresh basil and whole cloves. To make healthier, I use xylitol(natural sugar substitute derived from birch)in place of brown sugar, at almost equal equivalent.

Angel Chicken Pasta

Perfect recipe! Simple to prepare, yet tastes like I've slaved all day! This is not a recipe I make regulary, as it isn't too healthy. I do try to make it a little healthier by using organic cream cheese(still not perfect), fresh chives from my kitchen herb garden and spelt angel hair. Great for special occassions, and company! Everyone always loves this recipe! Thanks!

Creamy Chicken Lasagna

My hubby, and eight children, really liked this recipe. Dh said he preferred this recipe over all other lasagnas, I've made. I, on the other hand, wasn't crazy about it after the first few bites. I found the cream cheese overpowering. Next time, I will use half cream cheese/half cottage cheese. I added italian seasoning, ground pepper and garlic, but it could have definately still used more garlic. Something else seemed to be missing, as well. I'm going to keep working on this one!
