Catfish Etouffee
The ingredient list for this recipe is very similar to a crawfish recipe in the Frugal Gourmet's American collection and it makes for a good comfort food that even my wife, who doesn't really care for most fish, really liked. Yat's restaurant in Indianapolis specializes in etouffee and other Creole dishes. This could have come right out of one of their kettles. Because I substituted canned tomato, juice and all, I thought it needed a little sugar and some cumin to mellow it out a bit. Recommend putting Tabasco green sauce on the table for those wanting to kick it up.

Slow Cooker Chicken and Dumplings
The final outcome to this recipe was really good, but there are too many wildcards to consider it finished. Chicken breasts should include ounces. I had breast halves large enough to serve two, so I reduced the count to three. Still had more than enough chicken. Enough water to cover wasn't enough water to finish. I had to add almost two cups (boiling) at the end to have enough to cook the dumplings. And it would help to have the intended pot capacity too. I selected a store brand flakey biscuit that I think was too sweet. Identify a national brand. Don't leave it up to chance to get the right biscuit dough. Finally, I thought the butter was over the top. The other ingredients had plenty of flavor to carry the recipe without any added butter. Add some in just before serving if you need to.
