Corned Beef and Cabbage

this recipe is great! really yummy - even my 4-year old and 2-year old loved the corned beef. definitely go for the flat cut. i made the recipe exactly as it reads, and i wouldn't change a thing.

Caramel Apple Pork Chops

I was looking for an apple compote recipe to go with pork chops. This one is pretty simple and good. I did make a couple of changes. I dredged the pork chops in egg and flour before frying. Then I added the apples, spices along with 1 cup of apple cider and a few sprigs of thyme and let it reduce down for about 5 minutes. Turned out great!

Pork Chops a la Slow Cooker

This was ok. I've never made pork chops in the slow cooker before, but it came out too soft and didn't seem like a pork chop at all. It was more like stewed pork.

Caramelized Baked Chicken

I made the sauce as the recipe stated, but I used chicken thighs instead. I cooked it for 30 minutes at 400 degrees and it came out really good. I thought it was going to be a bit salty with all the soy sauce, but it wasn't. I would just add some grated ginger next time to add some more flavor. I would definitely make this again!

Spinach Pancakes

I made these more for my toddler to get him to eat veggies. They turned out great and he ate them up like a champ! I would highly recommend it for you moms/dads out there who want to get your kids to eat their greens. A few changes. I made a 1/2 batch first to try. I added Parmesan cheese and garlic powder like others had recommended. For a 1/2 batch, I used 2 eggs with 2 tablespoons of flour. I also added about 2-3 tablespoons of heavy cream. The batter was a little thinner than a pancake batter. Fried them up in olive oil and they turned out great. I would definitely make them again.
