Fantastic Black Bean Chili

I already have a meatless recipe for black bean chili, but I was looking for something different. This looked too simple to be great, but it was! I used half lean ground beef and half ground turkey breast instead of regular ground turkey. I loved it, my eldest devoured it, and my youngest liked it too. Husband was out of town, so no vote from him!

Mexican Bean Salad

Based on other reviews, I halved the dressing amount and skimped on the oil a bit to reduce the fat. As I was making it, I felt it would have been a bit too much peppers and onions if I followed the recipe, as the peppers and onions they had at the store were about the size of grapefruis! Otherwise I stuck to the recipe and it was great. I love bean salad and this was no exception. My husband has NEVER liked bean salad and he raved about this one and so did everyone else. Definitely a keeper! Thanks for the recipe!

Chinese Napa Cabbage Salad

Everyone at the get-together liked it. I used only 2 tbsp of butter and that was plenty to brown the noodles. A 1/4 cup isn't necessary and is just too much grease. Next time I make it, I will use a little less almonds and sesame seeds, it was just a bit much for how much napa there was. I used the whole head of the largest I could find at the grocery store.

Alice Chicken

Campbell's® Turkey and Broccoli Alfredo

My husband liked it. I thought it was edible, but didn't have much flavor and was really sticky. I was difficult to get everything to mix together. Both of my kids ate it, but neither made mention of it, which means that it was just okay.

Ray's Chicken

It was okay. Nothing special or amazing. I might have enjoyed it more if I hadn't already tried the marinade for "Unbelievable Chicken" on this site. I just would never make this again over the "Unbelievable Chicken". The kids liked this recipe, but both said they prefer the "unbelievable chicken" a lot more that this one.

Lentil Soup

I altered this recipe a bit, but it was great! I omitted vinegar, and omitted the oil except for about a teaspoon to saute the carrots/onion. I doubled the amount of carrots, used a lot more spinach, added some diced tomatoes, and substituted a mix of chicken broth and vegetable broth for half of the water. And I added a little diced ham because my husband always wants some sort of meat. It was awesome, and my husband thought so too. My kids weren't home that weekend so they didn't get to try it, but I will be making this again, soon! UPDATE: My eldest requests this, she absolutely loves this soup. My youngest still hates soup.

Beer Lime Grilled Chicken

It was okay. I marinated it a little longer as suggested by other reviews, but otherwise stuck to the recipe. The beer taste was a bit overpowering. I think it would have been better with more lime and less beer. However, it was juicy. My husband said it was 'good', I couldn't finish mine, my 9-year old took a little prodding but did eat it, and my 6-year old nearly licked her plate, which is unusual for her. But I probably won't make again unless I change the recipe quite a bit.

Kielbasa Fried Rice

It was pretty good, but not amazing. My husband absolutely loved it and took nearly all the leftovers the next day, leaving me no lunch! But my kids were not impressed. One ate it, but only gave it a 5 on a 1-10 scale. My littlest one took a bit of prodding to eat it. I thought it was good, but the ingredients just didn't seem to "go together".

Black Beans and Pork Chops

I was hesitant to try this since there's not many ingredients, I thought it would be bland. The changes I made are that I used boneless pork chops, a whole lot more cilantro and I poured half of the bean liquid out and replaced with water to reduce the sodium. I served it over rice. My two young children hate salsa and tomatoes, but they both gobbled up everything on their plate and raved about it. My husband also thought it was great, and I liked it too and it was simple to make. The leftovers the next day were good too! This will go into my box!

It was just okay. My husband said it was "good, but I hate the peppers in this recipe", my kids took some prodding to eat it, and I thought it was just okay. Easy to make, but probably not something I'd make again.

Honey Ribs

I made this by the recipe except omitting the broth and water per others reviews. I'm not a big salt fan, so I cut down on the soy a little also. The husband and the kids (even my picky one) liked these. I thought they were okay, but nothing to rave about. I trimmed the ribs of all visible fat, but the crockpot was still full of oil at the end and the ribs were gray. Quite unappetizing. I stuck them under the broiler for a few minutes to resolve the color, but they were still greasy. Maybe I should have drained some of the fat as they cooked. But it still gets 4 stars because my very picky 6-year old ate them.

Best Hamburger Ever

Too much salt. The onion soup mix is basically nothing but salt and dried onions, then you have all the salt from the cheese, soy, and worcestershire. WAY too salty for anyone in my family to enjoy!

Ian's Potato-Vegetable Soup

The only thing I did differently is I omitted the celery and for the water, I used half water, half skim milk. It was easy to make, somewhat healthy, and my 8-year-old gobbled it up. I thought it was okay, but I'm not really fond of celery, so the cream of celery soup wasn't a good choice for me. I think next time I will try maybe cream of chicken or something and it will probably be great. For someone that likes celery, this would be awesome as written.

Stuffed Pork Chops III

I totally spaced out and forgot the onion. Otherwise, I followed the recipe exactly except I browned the chops with a tiny bit of olive oil instead of butter. My husband asked how difficult it was to make, which I replied that it isn't difficult at all. He said "That's good, because this dish is phenomenal!" I thought it was good, but I think I'll omit the sugar next time in the stuffing - I didn't like the sweetness, and I'll remember to add the onion, and perhaps a little celery. Both of my daughter's liked the pork, but neither would eat the stuffing. The beef broth totally makes this recipe, and I think a little more would be good so there's more to have on top. In all, it's a keeper with a little altering! Thanks!
