I used two small chickens and boy were they good and so moist and tender. Great combo with the lemon and rosemary. I basted them 3 or 4 times during cooking.

Eggplant Parmesan II

Reviewed: May 14, 2009
Great recipe. I followed some of the reviews and peeled the eggplant and then sweated for 30 min. Patted dry, dipped in egg, shook in a plastic bag that had seasoned bread crumbs and grated parmesian cheese. I used mozzarella, a bit of feta and light rigatta cheese. Baked a bit longer because of all the cheese but even the kids liked it and the eggplant tasted fresh. Glad I peeled it.

Kiki's Borracho (Drunken) Beans

Reviewed: May 31, 2009
I have cooked these twice. Best Mexican beans ever and they freeze wonderfully. I did 2 lbs. in a slow cooker, soaked beans night before. Used 1 1/2qt. chicken broth. 2 bottles bud light. 1lb lean bacon/sliced, sauted w/ 1 white onion, 9 cloves garlic. 1 cup or so leftover pulled pork. Sliced/slight 1/3 cup jalapeño from a jar, the fresh that I used the first time was to hot for my family. The jarred kind are always heat appropriate. 3 cans of diced tomatoes w/ onions, green pepper etc. Only used 1 1/2 bay leaves and 1 1/2 large Tbls. oregano and added fresh as needed toward the end. 1/2 bunch of cilantro in the beginning and add the rest toward the end. Along with some cumin and liquid smoke.(last two hours). Cooked all day in 6 qt slow cooker on high 10-7pm. When I finished they tasted even better than the best retaurant borracho beans in TX!! Yum!!!! My friends and family can't get enough of these. Thanks Kiki?

Graham Streusel Coffee Cake

Reviewed: May 31, 2009
WOWZA! Look no further for a crowd pleaser. I made this in a bundt pan and cooked for as long as the box said for a bundt. Turned out moist and everyone could not wait until it had cooled. They watched it like it would do a trick. Well it did, wow, will definately make again. Use Betty Crocker pudding cake mix.

Amy's Cilantro Cream Sauce

Reviewed: Jun. 18, 2009
2nd try: I did not have whipping cream so followed the recipe. I would add 2 Tlb. sour cream 1/4 tsp cumin and 1 Tbs. garlic salt. This will still let the cilantro come throughl. This was fantastic. I used whipping cream and a tad of cream cheese. Fantastic. I could have used it as a dip but used it over sliced grilled chicken. The kids said "yeck" when they saw it but "oh my gosh" when they tasted it. Needless to say there were no leftovers and my oldest made a burrito. Will use again and again.

Really good but be careful not to overcook the chicken as it can become dry. Great flavor will make over and over.

Warm Apple Buttermilk Custard Pie

Reviewed: Oct. 25, 2009
We love this and will make again. We did cut down on the white sugar a bit like other reviewers said. We did not have buttermilk so we used milk w/ vinegar. The custard comes way up while cooking so a deep dish pie dish is a must.

Colleen's Slow Cooker Jambalaya

Reviewed: Oct. 25, 2009
This was a good recipe but watch the spices 1 tps of my homade cajun and a 1/4 tsp.cayenne. My Cajun is already hot and the andouille can run hot as well,. 2 cans of chicken stock, we like it a little saucier. I waited until 1/2 hour before serving to add the shrimp as it would have made it too fishy. I also used leftover chicken. I liked the fact that it was like a stew. We put our rice in a bowl and added Jambo on top. I think if I told my father-in-law I was making this again he would travel from IA to have it. Very Good

Pollo Mediterranean

Reviewed: Nov. 1, 2009
I do not usually rate recipes a 5. I would do this exactly like it is.....i had some chopped fresh tomato's in my fridge and added them at the end before removing the chicken. Also stir your cornstarch. I always make my cornstach thicker and add a little at a time. Cooking the sauce a little longer made it very nice. Will definately make again.

G's Flank Steak Marinade

Reviewed: Nov. 14, 2009
This is a great marinade. I add about 1/4- 1/2 C. orange juice. I also cook under the broiler for about 4-5 min per side then wrap in foil for 10 min. for meat to soak all juices back in.

Homestyle Turkey, the Michigander Way

Reviewed: Dec. 9, 2009
This was amazing. When I put it on the cutting board the bottom half seperated from the top and I just pulled the dark meat off the bones. The white meat rivaled my smoked white meat which is hard to do. Old family recipe. Will never cook a turkey any other way. Kuddos

What a nice, easy, surprise of a recipe. I used frozen and they came out a little rubbery so next time I will use fresh. Loved the flavor and was a great sauce for pasta.

I added to already cooked beef, 2 lbs., dried garlic, dried onion, taco seasoning, a whole bunch of cilantro, corriander, cumin and a little basil, two small cubes beef instant bullion 1 1/2 cup water and cooked in a crock pot on low for a couple of hours. Could not keep the kids out of it. Was going to have it tomorrow night but had to serve it tonight or it would have dissapeared. Had to keep warm for a late commer and it was too salty so don't cook too long Yum

Applesauce Bars

Reviewed: Apr. 4, 2010
These are great. I used the cream cheese, butter recipe frosting. But I am sure they are great on thier own or w/ the frosting from the recipe. My boys ate all of it in the first 24 hours. I sifted my flour but will not next time. They were a little too moist to cut and eat like a bar, more like a cake.
