Rhubarb Stir Cake

This was pretty yummy, although I think I'll keep looking for a better rhubarb cake / bread recipe. A bit too sweet for my liking (even though I reduced the sugar to 2/3 of the original !) Great texture; I used slightly less rhubarb (it was all that I had), and baked muffins instead of a cake, which worked really well!

Brooke's Best Bombshell Brownies

ABSOLUTELY DELICIOUS!! I have a fan oven, and baked the brownies at about 145 / 150 degrees C for 35 minutes, putting foil on top towards the end to stop them browning too much on top. I then switched the oven off and let them finish cooking in the warm oven for an hour - they turned out *perfectly* fudgy. Definitely a recipe I will use again and again and again!

Apple-Cran-Cherry Oatmeal Cookies

These were nice! I used very low-fat sunflower spread in place of the butter, missed out the cranberries (I had none) and added in chopped walnuts to give it a bit more crunch! Mine took about 15 minutes to do. I'd never baked with applesauce before, so I found it a bit hard to tell when they were done. I waited until they'd gone nice and golden on top, but not too dark. I left them to cool on wire racks, although they were lovely warm! Enjoy!

Ninety Minute Cinnamon Rolls

WONDERFUL!! Absolutely delicious - so gooey and sticky and .. mmmmm! I am usually hopeless with yeast cooking but these worked out brilliantly. I put mine on a 25 x 35 cm pan at 150 / 160 degrees C (fan oven) and in about 11 minutes they were lovely and golden. I made a glaze with milk, icing sugar and vanilla, although they were already sweet enough for most people's tastes! Try this recipe!!

Cinnamon Rolls I

This recipe did not turn out well at all for me - the dough was far too moist to begin with and they didn't rise at all. The sugar / cinnamon melted with the butter in the oven, making the rolls spring apart and well.. I just ended up with a huge sticky (but reasonably tasty!) mess! Will try a different recipe next time, but make sure to roll the dough out very thin so that I can roll the dough up a good couple of times. Also, 20 minutes was much too long for me - mine were slightly overcooked even at 15 minutes.

Oatmeal Craisin Cookies

Yum yum! These were perfect! Exactly what I was looking for - a yummy, fruit-filled, not too sweet oatmeal cookie! I didn't have any plain (all-purpose) flour to hand, so I used wholewheat flour instead, which worked just fine! Take them out when they are still quite gooey and leave to cool completely on the baking trays - they will be gorgeously soft!

Pineapple Upside-Down Cake II

This is great! I reduced the topping as others had said, and used round segments of pineapple out of a tin. This was gooey, moist .. and gone within 5 minutes! One for keeps!

White Chocolate and Cranberry Cookies

WATCH THESE COOKIES!! They taste great... IF you manage to get them out while they are still a bit raw in the middle, and then leave them to cool on the baking trays for a few minutes.. If you leave them cook even a minute or two longer than they need, you'll have hard, brittle cookies.. not the soft gooey scrummy things you want!

Apple Strudel Muffins

Baklava

This crisps very easily, so watch out! You want it nice and gooey! Also (although, much to my annoyance, I only read this after I made the baklava!), it's a great idea to cut the pastry into correct-sized pieces before starting - you can work a lot faster and get it in the oven in half the time!

Caramel Bars

I was a bit disappointed by this recipe, as they turned out much much too sweet for my tastes (and I have one extreme sweet tooth!).. However, this may be down to the fact that I couldn't find any plain caramels in supermarkets here in the UK, so used chocolate-covered caramels instead. But nonetheless I'd recommend it and maybe even make it again someday.

Anzac Biscuits I

These turned out pretty nice in the end, although the dough was extremely crumbly. A bit too sweet for my taste though, so to take the edge off the sweetness I made half the batch with dried fruit or nuts - some cranberries, some sultanas, peacans and some chopped crystallised ginger - delicious!

Best Ever Banana Bread

Great recipe - one for keeps! I didn't change much; as suggested by other reviewers I used only 2/3 of the sugar and added a bit more flour to compensate. Instead of just nuts I used about 70 - 80g of a mix of different chopped nuts, sultanas, raisins and cranberries - delicious!!

Bake Sale Lemon Bars

Nice recipe, but would definitely reduce the temperature and the baking time next time. Also use a smaller baking tin to make the bars deeper. But delicious anyways - will use again! Thanks!
