Baked Stuffed Apple

Well I was in the mood for a fall desert and needed something to keep the kids busy tonight while dinner was cooking. I am not a big fan of baked apples unless they are very sweet, so I came across this recipe and liked the combination of Cranberries and apples. I made a couple changes. First being that I made it for 3 apples instead of just 1, so I tripled all ingredients. I have no nutmeg, so I substituted 1 tsp. of dark brown sugar to make the apple sweeter. I also had no dried cranberries on hand, so I used a Tlbsp. of canned cranberries. Everything else I followed, including cooking times. The family LOVED these. They were perfectly sweet topped with some cool whip and some of the extra sugar mixture on top to make it look pretty. I am going to try some oats on top or graham cracker crumbs to give it a different texture, because I am a huge fan of apple crisp. All in all, this is an EXTREMELY simple and delicious dish that can be thrown together quickly, and is something the kids can help with. It cooked while we ate dinner. Just great.

Banana Fritters

These were so simple! I have never made fritters before, and have only eaten them once or twice. A week ago I bought a big bunch of mini bananas, and they were very ripe so I wanted to check out some banana recipes and found this. I used 3 mini bananas for each required regular banana. I was also out of nutmeg, so I omitted that part, however, I will definitely use it next time. I am also going to double up on the cinnamon, as I love a strong cinnamon flavor. They aren't very strong flavored, so you definitely have room to experiment; But these were great just as they were! I only used about 1/2 q. of oil and cooked them in a wok (not electric). If you were to top these with some caramel along with the powdered sugar, they'd make a great dessert!

Chipotle Crusted Pork Tenderloin

Very good! I put the pork on the grill wrapped in foil till the end, then I cooked it over the flames. I overcooked my pork, so it ended up being dry, but the flavor was delicious! If it wasn't so dry, I was going to use it for pork tacos, and next time I will make sure I can do that.

Grandmother's Cheesecake

Well this was a lot of work! But it was my first homemade cheesecake, so maybe they are all like this. It turned out very good. The crust, however, was very overcooked. Next time I am going to skip the first part of baking the crust, or cut the time in half, because the crust in the end was a dark brown and dry. The cheesecake baked well though, and had a very light taste and texture. Very good, but again, a lot of work.

Chocolate Frosting II

I didn't like this too much. I tasted too much like powdered sugar. I added about 6 oz. of cream cheese though, and that made it pretty good. I used it on a cake that I made the egg white receipe for, and colored for my cousin's Birthday. It did turn out good as a chocolate cream cheese frosting!

Caramel Apple Crumble Pie

This turned out fabulous! I doubled the recipe and made two pies, and they were delicious. Gave the other between family and friends. I took a lot of the reviews and added flour to the bottom of the pie and 1 tsp cornstarch to thicken it up. I wasn't runny at all! I also omitted the caramel during the baking process, since everyone said you couldn't taste it. I added the caramel on each piece before serving, and you still couldn't really taste it over all the other flavors, but with vanilla ice cream it was great. I took a tip off the pie shell box and after baking for 15 minutes, I put foil around the crust's edges, and they baked perfect! Will be making this again next year.

Jalepeno Cheese Dip

I have to admit, I didn't stay completely to the recipe. I omitted the mayo because we love the taste of cream cheese and omitted the mozzarella and used only cheddar because it was all we had. We also didn't have fresh garlic, and substituted granulated garlic powder. Fresh garlic would have made this much better, but the dip turned out great! Gone in and hour. It is definitely better warm, and with stood two warm-ups. I blended the cream cheese with the garlic powder and diced jalapenos (I used 3 for extra flavor). It was creamy and not overly spicey. Used Ritz crackers, it was a hit, will definitely make again, just with fresh garlic.

Banana Banana Bread

I like the lightness of this bread, I am not a fan of dense banana bread. I did add spices as others suggested. I added 1/2 T. cinnamon, a little allspice, and a little ground nutmeg. The flavor is not bad. To add a little bit of extra flavor, I topped it with a mixture of rolled oats, butter, and some brown sugar. Make sure the topping isn't too thick, or the bread won't cook right. The topping needs to bake at least 1 hour.

Snickerdoodles I

I have never had any Snickerdoodles before, but these were wonderful! I thought they were best right out of the oven. They're my boyfriend's favorite kind of cookie, and he loved them. I also took the added note from a member of sticking a piece of bread in a zip lock bag to keep the cookies fresh, and it really did help. They lasted a long time. This does make a big batch though, so make sure there is somewhere for them to go :)

Chicken Pot Pie VI

This was an absolute hit! Everyone loved it. Leftovers barely made it to the next day. I did not have any poultry seasoning on hand, so I just skipped that part, but it still turned out wonderful. The only thing that would have made this better, a homemade crust.
