Well, My name is Nikki. I am 23 and mother to my wonderful 3 year old son. We just recently moved into a new home with my son's father, who is also my loving boyfriend. I co-own a candle company with my mom, go to school full time, and also work part-time on and off. I have tons of family that I love, and have many different interests. I also have a lot of hopes and dreams for life!
My favorite things to cook
I love to eat food more than I love to cook it, but my favorite things to cook are comfort foods, Italian foods, and some gourmet dishes. I love to bake, although I am not very good at it. When things are in the oven, I tend to get distracted and burn things. Ooopppss!
My favorite family cooking traditions
Every holiday, especially Christmas, is made for cookie making and decorating. St. Patrick's Day is Corned Beef. I love cooking the Ham at Christmas and Easter. Holidays are the best for cooking.
My cooking triumphs
I make a killer holiday ham. I am also very, very good, not to sound conceded, at throwing together a bunch of ingredients lying around the house to make on delicious meal. I also like to add my own personal touch to recipes to make it my own.
My cooking tragedies
Like I mentioned, things in the oven do not do so well with me. If I don't see it, it tends to slip my mind. My worse cooking experience so far, breads. Garlic breads, beer breads, I tend to overcook them all. I have to work on that.

Baked Stuffed Apple
Well I was in the mood for a fall desert and needed something to keep the kids busy tonight while dinner was cooking. I am not a big fan of baked apples unless they are very sweet, so I came across this recipe and liked the combination of Cranberries and apples. I made a couple changes. First being that I made it for 3 apples instead of just 1, so I tripled all ingredients. I have no nutmeg, so I substituted 1 tsp. of dark brown sugar to make the apple sweeter. I also had no dried cranberries on hand, so I used a Tlbsp. of canned cranberries. Everything else I followed, including cooking times. The family LOVED these. They were perfectly sweet topped with some cool whip and some of the extra sugar mixture on top to make it look pretty. I am going to try some oats on top or graham cracker crumbs to give it a different texture, because I am a huge fan of apple crisp. All in all, this is an EXTREMELY simple and delicious dish that can be thrown together quickly, and is something the kids can help with. It cooked while we ate dinner. Just great.

Banana Fritters
These were so simple! I have never made fritters before, and have only eaten them once or twice. A week ago I bought a big bunch of mini bananas, and they were very ripe so I wanted to check out some banana recipes and found this. I used 3 mini bananas for each required regular banana. I was also out of nutmeg, so I omitted that part, however, I will definitely use it next time. I am also going to double up on the cinnamon, as I love a strong cinnamon flavor. They aren't very strong flavored, so you definitely have room to experiment; But these were great just as they were! I only used about 1/2 q. of oil and cooked them in a wok (not electric). If you were to top these with some caramel along with the powdered sugar, they'd make a great dessert!

Chipotle Crusted Pork Tenderloin
Very good! I put the pork on the grill wrapped in foil till the end, then I cooked it over the flames. I overcooked my pork, so it ended up being dry, but the flavor was delicious! If it wasn't so dry, I was going to use it for pork tacos, and next time I will make sure I can do that.
