Amish Breakfast Casserole

This is a great way to start the morning! No changes needed. I made one batch with sausage and one with bacon - the bacon is better. If you're a bacon lover, you could use 2 lbs of bacon & it'd be even better.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

This recipe is unique, with a great flavor base. My husband loved the lemon zest & balsamic zing. I made the recipe just like it asked, I think next time I'll cook the chicken first, pull it out to rest while making the sauce. One less pan & the lemon will flavor the tomato sauce more.

Salmon Chowder

This chowder is AWESOME with a few modifications: use fresh garlic (2 cloves), use fresh salmon (if you're not in a place that you can get it, the canned will work, but you're sacrificing good flavor), and add the LIQUID SMOKE (2 cap fulls). The liquid smoke is the secret ingredient that all will just savor. Oh - and don't use a maple bacon, it'll ruin the smokey flavor. All the other things, carrots vs no carrots, creamed corn vs no corn or regular corn - these things are adders that are for your personal tastes. I like the cream corn & I leave the carrots out. Yukon Gold potatoes seem to hold their crispness longer too.

Crab and Pea Salad

Wow! This is such a simple recipe & it's so good! Everyone wanted to know what was in this awesome salad. I added 1 tsp of cumin the next time I made it & it was really good. Next time I'm going to try a bit of worceshire sauce, I bet that would be awesome.

Beer Batter Fish Made Great

This recipe is great for all types of fish! I fried halibut & had great success. I added 1 tsp of cayenne to the batter for a bit of a kick. It isn't too hot with all the beer, flour, and tartar sauce - but it adds a good flavor.

Tartar Sauce II

This is a great tartar sauce recipe for any fish type meal. I love all of the ingredients. I also ended up splitting the sauce in half, added about 1 Tbsp of finely diced pickled jalapenos ... at a dinner table of 12, the spicy tartar was gone before it made it around the table!

Chicken Pot Pie IX

I made this EXACT recipe - using store bought pie crust (against my better judgement). This turned out AWESOME! An instant hit, the key is the celery & celery seed in the gravy - oh SO YUMMY!

Chili Rick's

This is the heartiest, best flavored chili we've had in years! I sauted the onions with a garlic clove & 1 tsp of red pepper before putting everything into a slow cooker. I used just one 18oz bottle of kraft smoked hickory BBQ sauce, and a tsp of liquid hickory smoke. 4 hours on high in the slow cooker mixed the flavors really well. I can't decided if I like the BBQ hint or the bacon pieces better. This is a guaranteed winner every time!

Butternut and Apple Harvest Soup

I made this soup, leaving out the cream & using a hand-held blender. It was awesome! I made another recipe the next week & was so dissapointed that I had to find this again & write a review. The apple & carrots are the key to making this soup tasty and hearty.

Catherine's Spicy Chicken Soup

I've made this recipe COUNTLESS times, all with great success! Variation can come from the type of beans to the type of salsa used. I recommend medium southwest type salsa & getting a mixed blend of beans. I always let the recipe warm in the crock pot over night to let the spices settle into the chicken - always a hit with the family! ***UPDATED - this soup is a staple in our house now. If I don't make it at least once a month and have a bowl or two frozen for a quick lunch, my husband will ask, "Isn't it time to make some Catherine's?"
