Yogurt Cake

I love pound cake, but I'm always concerned about all the fat and the sugar. This cake was really good, I only used 1 cup of sugar, 3/4 cup of butter, fat free plain yogurt and vanilla extract. My husband and the kids also enjoyed it. I will definitely make it again!

Roasted Vegetables

This was a dilicious recipe, very different from my regular roasted vegetables recipe. I omitted the Yukon Gold potatoes. I also added mushrooms, zucchini and baby carrots. As suggested by other reviewers I baked the root vegetables in a large cookie sheet for 30 minutes and the rest of the vegetables in another pan for 15 minutes. The fresh herbs gave a really nice flavor. Thanks Saundra!

Grilled Shrimp Scampi

Excellent recipe! This is a lower fat version of the traditional shrimp scampi, which is usually loaded with butter. I used dried parsley because I didn't have any fresh, but it was still great.

Lemon Linguine

This was such an easy dish and turned out so good. I used only 1 Tbsp of butter and a little olive oil, and lots of fresh basil. The combination of flavors was great. I will make this again. Served with Grilled Shrimp Scampi from this site.

Chicken Honey Nut Stir Fry

This dish was excellent. I read the reviwers and follow Larkspur advice to add brocoli stems since I didn't have celery. I also added garlic, red bell pepper, green bell pepper, brocoli florets and fresh squeezed orange juice. Served with basmati brown rice.

Curried Cashew, Pear, and Grape Salad

Very nice combination of flavor in this salad. I omitted the grapes because I didn't have any, but I wouldn't change anything in this recipe. It's great just as is.

Halibut with Rice Wine

This dish was amazing! Halibut is my favorite fish and the sauce had such a nice flavor, just like in a restaurant. I follow the recipe exactly as is and I wouldn't change anything here. Thanks Kslago this is a keeper!

Honey Fruit Salad

I loved this fruit salad! I doubled the lemon juice because I like tangy and used real maple syrup instead of honey (just a preference). Thanks for this great recipe, I will make it again!

Italian Spaghetti Sauce with Meatballs

I didn't eat this dish but my husband and the kids loved it. For the meatballs I added some onions, garlic and a couple Tbsp of milk just as suggested. On the sauce instead of whole tomatoes I used crushed tomatoes because that's what I had. I also added fresh basil, fresh rosemary and fresh grated parmesan.

Lime Chicken Soft Tacos

This recipe is fantastic! I added fresh cilantro instead of oregano and added a little bit of homemade taco seasoning. I was skeptical at first with the lime juice and vinegar but it gives a really nice flavor. Served with homemade guacamole and salsa.

Asparagus and Cashews

This recipe is excellent, so taste and very simple. After I started making this dish I realized that I couldn't use any soy sauce due to medical reasons, but even with this missing ingredient it was fantastic. Served with Salmon with Brown Sugar Glaze recipe from this site.

Crunchy Romaine Strawberry Salad

Great salad! I made a few changes due to personal preference. I omitted the ramen noodles because there are a lot of fat in it and I'm not a big fan of it anyway. I used splenda instead of sugar, and olive oil instead of regular oil. The green onions give a really nice flavor to this salad. Thanks Leslie, I will definitely make this again!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

We really enjoyed this dish. I omitted the pineapple because I didn't have any and my husband grilled it instead of pan fried. The mango salsa was very taste and goes really well with mahi mahi.
