Chicken Stir-Fry

Delicious! Even my kids had this dish. But I also added: 2 cloves minced garlic, 1 Tbsp ginger, 1 red bell pepper and 1/4 cup cashew nuts (I rinsed to lower the sodium in this dish). Served with brown rice. I will make it again for sure!

Cashew Chicken with Water Chestnuts

This dish was absolutely delicious! I used fresh ginger, sesame oil instead of vegetable oil, and since I had some vegetables in the fridge that had to be used I added some brocoli, thin sliced carrots and red bell pepper. I rinsed the cashews to cut on the sodium and used reduced sodium soy and chicken broth. Thanks Tricia!!!

Molly's Chicken

We don't usually eat dark chicken, but I decided to make this recipe for tonight because was simple and I didn't have much time. I was skeptical at first but this dish was so good, there were no leftovers my kids LOVED it! Here is how I made it: I browned the chicken first then sautéed garlic and 1/2 onion and transferred everything to the crockpot. I only used 1/4 cup of light soy sauce to avoid sodium, then added a little of water to make extra sauce. It was delicious! Served with basmati brown rice and steamed carrots and brocoli.

Black Bean and Corn Quesadillas

I made these quesadillas for lunch today and they were excellent. I almost omitted the brown sugar and I am glad I did not because it does give a nice flavor. I added pinto beans instead of black, just a preference and I also added cumin and fresh cilantro.

Sweet and Savory Kale

Very, very delicious! Since kale is so healthy and good for you, I'm always trying new different ways to make it and this dish is really great. I followed the recipe exactly as is, just forgot to add the almonds at the end. Served with grilled salmon and roasted sweet potatoes.

Mom's Chicken Cacciatore

This dish was ok to me, but my husband absolutely loved it. I added a small can of tomato sauce and I omitted the mushrooms because I didn't have any. Next time I will not use any flour just as other reviewers have suggested.

These were so delicious! I had leftover grilled vegetables which was perfect because had a smoky flavor. I omitted the mushrooms. I will definitely make these again, thanks!

Oatmeal Peanut Butter Bars

With a few changes these can be a very healthy breakfast/snack. First of all I used honey instead of corn syrup, after that there is no need to add ANY sugar. I also omitted the raisins (just because I'm not big fan of dried fruits) and the chocolate. The coconut gives an amazing flavor, next time I add even more.

Chicken Milano

This dish is absolutely delicious! Even with all the changes I made to be healthier it turned out excellent. 1) I used olive oil instead of butter. 2) Used half and half instead of heavy cream (only used 1/2 cup to cut on fat). 3) Served over whole wheat linguini because I didn't have fettuccini. Thank you so much for this great recipe!

Wow, these egg rolls were sooo good!!! I doubled the recipe, used fresh cilantro instead of parsley and omitted the spinach because I was out of it. Baked instead of frying.

I loved this recipe, so healthy and tasty. I used real maple syrup instead of honey because I don 't like honey. I also reduced the amount of sugar in half and added toasted almonds instead of chocolate chips, just a preference. Thanks for the great recipe!

Spinach and Feta Pita Bake

Absolutely delicious! I didn't have any sun-dried tomato pesto, so I used regular pesto and chopped some sun-dried tomatoes over. I also added some chopped roasted red bell pepper and omitted the mushrooms. Thank you Heatherbee, this is a keeper!!!
