Great Green Salad

Absolutely delicious! This is one of my favorite salads from this site. The only change I made was 1 tsp of Dijon instead of 1 Tbsp, just a preference.

Lentil Soup

We loved this soup! I only used 8 oz of tomato sauce because that's what I had on hand. I also sheredded the carrots because I prefer that way.

Glazed Salmon

This was a quick, simple and very tasty recipe. I used real maple syrup instead of molasses and next time I will reduce the amount of olive oil to 1/3 cup, I think that 1/2 cup was a little too much for this dish. You can see on my picture how the corners of this salmon turned out nice and caramelized, just delicious!

Lite Sausage Primavera

This was a simple and tasty recipe. I first sauteed the onions, then added the veggies (zucchini, tomatoes, green and red peppers), once done I set aside. Then I sauteed chicken sausage, and added to the veggies and served over whole wheat penne. Fresh chopped basil and some parmesan gives a really nice flavor to this dish.

Zucchini Parmesan

This dish was absolutely delicious! I read the reviews and made some changes just as suggested. I cut the zucchinis lengthwise added some salt and let stand for 20 minutes, then rinsed and pat dried with paper towel, this is very important because it will eliminate all the liquid from the zucchinis. Then I baked the zucchinis for 10 minutes each side at 450 degrees. Once the zucchinis are ready, I reduced the oven to 325 degrees and started combining everything just as on the recipe with some Parmesan besides the mozzarella. It turned out excellent; I will definitely make this again.

Cashew Chicken with Water Chestnuts

This dish was absolutely delicious! I used fresh ginger, sesame oil instead of vegetable oil, and since I had some vegetables in the fridge that had to be used I added some brocoli, thin sliced carrots and red bell pepper. I rinsed the cashews to cut on the sodium and used reduced sodium soy and chicken broth. Thanks Tricia!!!

Flan de Coco (Coconut Flan)

Outstanding!!! This was my first time making flan and this recipe was excellent. I only used 5 eggs and omitted the sugar in the condensed milk mixture. I also added a teaspoon of coconut flavoring.

These were so delicious! I had leftover grilled vegetables which was perfect because had a smoky flavor. I omitted the mushrooms. I will definitely make these again, thanks!

Honey Fruit Salad

Mexican Layered Dip

This was absolutely delicious! I mixed the refried beans with homemade taco seasoning and I added taco seasoning to the sour cream as well. I made my own guacamole because I don't like those from the store. I will definitely make this again, thanks for the recipe!

Sweet Vanilla Cupcakes

These cupcakes are absolutely delicious! I've been looking for a good vanilla recipe cupcake and this is a winner! I really like it's not over sweet. My kids don't like any frosting, just plain simple vanilla cupcakes.

Apple Avocado Salad with Tangerine Dressing

Excellent! Very light and refreshing salad. I used fresh squeezed clementines, doubled the amount of lemon juice and added a little bit of honey to the dressing. I also added a very small amount of smart balance butter to the walnuts and 1 tsp of brown sugar while toasting. Served with Key West Chicken from this site. I will definitely make this again!

Oatmeal and Wheat Flour Blueberry Pancakes

I just made these pancakes on Easter morning. I doubled the recipe and made 1 batch with blueberries and another batch with mashed bananas because that's the kids favorite fruit in their pancakes. I omitted the sugar because of the fruits and since I was out of soy milk, I used skin milk.

Good 100% Whole Wheat Bread
