Vegetarian Jambalaya

This was a very easy and great recipe! I didn't add mushrooms because I didn't have any, used a can of diced tomatoes instead of fresh and used brown basmati rice. Also, instead of baking it I just let everything cook together. The next day was even better, I will difinitely make this again.

Halibut with Zesty Peach Salsa

This dish was fantastic!!! I would truly give more than 5 stars if possible. I only marinated the fish for 1 hour and even then it was very flavorful. Other than that, I didn't make any change to this dish. I'm glad I had some leftovers of the salsa for the next day, so I could have some with chips.

Vegetarian Korma

This dish is absolutely delicious! As suggested by other reviewers I added the curry powder with the garlic/ginger. After adding the potato/carrots, I noticed it wasn't much liquid to cook them, so I added a little water. I only used 1 medium potato, doubled the amount of cashews, and to cut on fat I added 8 oz. of fat free plain yogurt instead of heavy cream and finally I added a can of garbanzo beans for some protein. Next time I want to add coconut milk since many other reviewers mentioned it turns even better. Thanks for such a wonderful recipe!

Breakfast Fruit Salad

I had lots of fresh fruit that I needed to use, so I also added 1 cubed orange, papaya, strawberries and fresh squeezed grapefruit instead of OJ concentrate. I omitted the yogurt because I needed something dairy free.

Good for You Greek Salad

This was a very good salad! I didn't have a cucumber, so I used a green bell pepper instead. I omitted the onion and the black olives, just a preference and for the dressing I made "Absolutely Fabulous Greek/House Salad" from this site.

Split Pea Soup without Pork

Good basic soup, not great. I sautéed onion, celery and carrots with olive oil and I also added a bay leave. It turned out very thick and filling.

Restaurant Style Mac and Cheese

My kids love this recipe! This is so simple to make. I used half and half instead of cream and added a little extra. Next time I will halve the amount of processed cheese and add extra cheddar, just a preference.

Mediterranean Chickpea Salad II

This is a very good basic recipe, with a few addition it's a great salad. It really needs feta cheese, I also added a cucumber and a little of red vinegar. Very light but satisfying salad!

Beaker's Vegetable Barley Soup

This soup is absolutely fantastic! I made a few changes accordingly to our taste: I sautéed 3 gloves of garlic, onions, celery and carrots with olive oil. Once done, I added the chicken broth and all the other ingredients. Some reviewers advised that this soup was too thick, so I reduced the amount of barley to 3/4 cup and still was very thick. Next time I will add only 1/2 cup of barley. Thanks for this wonderful recipe, BEAKER1!!!

We really enjoyed this dish, I omitted the veggies because my picky kids wouldn't eat them. Also, in order to lower the amount of fat I made a few changes: I only used 2 Tbsp of butter and a little of olive oil, 1/2 cup of half and half and 1/2 cup of skim milk, 2% swiss cheese instead of regular. After all of these changes still tasted great!

This recipe turned out so good! You will need to be careful not to overcook the zucchini. First I sautéed the onions, garlic and green pepper with olive oil (I didn't use any butter), then I added the zucchini and cooked probably for 2 minutes, added corn, salt and pepper and cooked for an additional 2 minutes. I didn't add any half and half because I don't think it would go in this dish at all. Once cooked, I transferred to a plate and sprinkled cheese on. Thanks A.P. Newman this is a keeper!

This is great! I reduced the amount of italian dressing by half, added fresh cilantro and lime juice. Next time I want to try with 1 can of black beans and 1 can of black eye peas.

Roasted Potatoes with Greens

This dish was very good! I used extra virgin olive oil instead of butter to make it healthier and roasted the potatoes a little longer because I prefer well done. Served with grilled chicken and stemead cauliflower.

Honey Balsamic Vinaigrette

This vinaigrette is excellent! I made it for a New Years Eve party and everyone loved it. I omitted the red pepper because I thoght it would be too spicy for my taste. I will definitely make this again. Thanks CathyRae!

Creamy Chicken and Wild Rice Soup

Delicious! To make this soup lower in fat and dairy free I made some changes. I used fat free Lactate milk instead of heavy cream and only used 1/4 cup of margarine instead of butter. I also added carrots, celery, onions and garlic. As suggested by other reviewers I reduced the amount of flour to 1/2 cup. After all these changes it was still very taste much lower in fat.

Feijoada (Brazilian Black Bean Stew)

This dish came out pretty good. I only used leftover of ham, I didn't add any bacon or ham hocks. I prefer black beans without any meat, I just made this because my husband was craving my Mom's food, he really enjoyed this. Served over brown basmati rice. Thanks for the recipe!

Chicken-Fried Chops

My husband really enjoyed this dish. After I browned the chops I sauted garlic, onions and mushrooms and added in the crockpot with the chops. I used organic cream of mushrooms instead of chicken soup.
